At this caseificio (cheese factory) you will be introduced to the universe of parmesan cheese and get to know its secrets. Behind every roll of Parmigiano Reggiano is more than meets the eye, due to the intricate traditional recipe behind and the controlled conditions of the entire process. You will watch cheese makers at work and witness the entire process. The tour of the factory will eventually lead to the aging room (‘stagionatura’ in Italian), where you will admire rows and columns of cheese wheels perfuming the air. The factory produces more types of cheese, all organic. The caseificio tour will end with a tasting of different types of Parmesan Cheese and ricotta accompanied by local products.

Today Acetaia Sereni is a leader in the production of traditional balsamic vinegar of Modena and a vast range of sweet and sour condiments. Here you will have a traditional lunch at the property's restaurant that is overlooking a breathtaking scenery. Lunch is centered around dishes typical of the Emilia-Romagna region that are best paired with different types of balsamic vinegar. Afterwards, you will have a private tour of the cellars, receiving a full explanation of the balsamic vinegar’s manufacturing process: from the pressing of the grapes and the wort boiling, to the filtration and mixing steps. Prosciuttificio Leonardi was born in 1988 from a vast experience in in the pork slaughtering and processing sector. 1988 is also the year in which the company joins Modena's ”D.O.P.” Prosciutto Consortium, which makes all their products labeled according to the PDO (Protected Designation of Origin) EU product quality scheme. This factory prides itself with upholding high production biological standards and producing exquisite dry-cured hams. It is a reliable supplier for Gucci restaurant in Florence and Massimo Bottura's top class restaurants. You will tour the factory, visit the production rooms, and understand how ham processing works, from the receipt of the meat to the final product. Your visit will finish off with the tasting of a wide range of their products: hams both raw and cooked, such as culatta, lardo, salami, prosciutto cotto, prosciutto al tartufo. The cold-cuts will be accompanied by crescentine, also known as tigelle, which is a typical bread of the area.

Just learned so much about Parmigiano, Prosciutto and Balsamic Vinegar. Paula was a great guide. So full of knowledge and do helpful and a great driver.

Of all the tours we took while visit Florence for our honeymoon this was 100% the best. Most people do wine tours which are great but this is a very unique experience when visiting Tuscany. Our guide, Paola, was extremely knowledgeable and gave us lots of insight into the making of Parmesan, balsamic and prosciutto. We were picked up right in front of our hotel and drove to each location with our guide. This is a very small tour and we only saw two other people who also had their own guide / driver. First stop was the Parmesan factory where we got to see the process of making Parmesan then had a tasting of 3 different aged parmesan to start. Then we went to a prosciutto factor and walked through the entire factory to get a first look at the operations. Then, we went upstairs and had a variety of cold cuts and wine which was quite filling. Last but not least we went to the balsamic factory to learn about the steps of producing balsamic. We walked through the entire factory and got to see each step to age the balsamic. Then after the factory tour we went upstairs to their new tasting room and got to taste at least 5 different balsamic a Then after the balsamic tasting we went up the hill to the insight restaurant and had an amazing lunch where they had balsamic on all of the dishes. Overall, this was my favorite tour in Florence and was a small group with great amounts of food and wine yo enjoy. I would 100% suggest this tour when you are in Florence. If you are looking for a unique small group experience when visiting Florence you will not be disappointed!

What a wonderful experience exploring Emilia-Romagna! Paola, our guide was so amazing and made our tours interesting and fun! We saw, we tasted and tasted some more, so skip breakfast and enjoy the gastronomic ride. Paola was a great driver and host and is so knowledgeable. It’s hard to pick but the balsamic tour and tasting was probably my favorite experience along with sharing the day with my husband.

The tour and information provided by the balsamic factory was fantastic. Our guide was late to collect us. She was not able to answer any questions about the cheese factory and nothing of any depth fir the surrounding areas appropriate to the factories we were visiting.

My guide was Daria and we had such a lovely and fun day! My favorite stop by far was the balsamic vinegar factory! It was beautiful and they had a gluten free lunch for me! Best balsamic of my life!!! The day was soooo perfect, I would highly recommend!

The personal/individual treatment during this tour really enhance the experience. Paula was our guide. She was fantastic, here knowledge and consideration towards our interests made the entire day fun. The Parmigiana, Prosciutto and Balsamic Vinegar tours were very well orchestrated. The knowledge shared was more in-depth than we anticipated. The food, WOW! Every tour ended with samples that were amazing. With everything included in this package, you can say you are getting value for money. Highly recommended!!!!!

We did a private tour, just myself, husband, and tour guide. It was fantastic! We learned so much about Italy and the generations of families who manage farms and vineyards to produce the most amazing balsamic vinegar, parmesan cheese and prosciutto. We started this day-long tour from Florence. Be prepared for a lot of driving, and possible traffic! Besides that, I highly recommend this tour for any foodie!
