We learned principles of cooking that will generalize well beyond the wonderful recipes. Our host chef is an expert and has surpassed the 10000 hour rule. Knowledgeable and passionate about cooking and teaching. Well worth the time and relatively small expense. Same meal with the same amount of wine at a restaurant would cost double and you'd leave ignorant after the experience and only have eaten for a day. Insread, you will learn to cook like a Roman for life.

Pauola was a lot of fun to learn from and very educational. We enjoyed shopping in the market, preparing new things and it was all fantastic with fresh seasonal ingredients. Thanks to Chumney for cleaning everything!

The cooking class with a chef was memorable and lots of fun. We learned cooking techniques that we will be able to use in real life. We mastered three types of pasta: gnocchi, a thick square spaghetti called tonnarelli and a small shell pasta that was very fun to make. We made artichokes for the first time in our lives. We'll probably buy artichokes already prepared in future but we are really glad we had that experience. The pasta we will definitely do at home. Not hard and lots of fun. How many people can say that they learned from a chef in Italy?

We enjoyed this cooking class with Chef Fabrizio and Chami! This was our favorite experience during our trip to Rome. We've taken other cooking classes in Italy before, and were already fairly familiar with Italian cooking, but we learned quite a lot during this class. We learned how to make Roman artichokes, gnocchi with a gorgonzola sauce, taglioni with the "mother sauce", and poached pears in wine sauce. Chef Fabrizio gave us a lot of pointers and techniques that will help us in the future with our Italian cooking and recipes.

This was a unique and worthwhile experience. The class started with shopping for fresh groceries at a local market. The small group classroom was well designed with workstations for each participant. The chef/instructor was very pleasant, patient, and knowledgeable. Time well spent. Highly recommended!!

This was an outstanding small group experience. The chef was a great teacher, and very knowledgeable. We started out by going shopping at a nearby market, and then jointly transformed these ingredients into a delicious dinner. The teaching facility was very nice with a fully equipped work station for each participant. HIGHLY RECOMMENDED!

Thus was an incredible outing and was one of the highlights of my time in Italy, and our whole trip was fantastic! Our chef and guide (Fabrizzio, though I am likely remembering/spelling that wrong) was so informative. As we walked to the market and then to the class location, he gave us information and history about the area that helped us for the rest of our time in Rome. The class was amazing. It gave helpful overall tips for cooking as well as for what we made that day. Our class was November 6th, but I am late to write a review, and I am glad I am! My boyfriend and I decided to make the gnocchi instead of our regular mashed potatoes as a side for our Thanksgiving dinner (USA) this year. I was worried that it wouldn't turn out as well. However, it was every bit as good as what we made in Rome. Our chef's great teaching and helpful tips enabled us to recreate the dish with great results. (His plating was much prettier though!) Thank you for the incredible experience!

We just had the best trip and such fun with Federico and Louise at Casale Alessandra. Federico's passion for food shines all the way through his lessons, guidance and of course preparation and presentation of his dishes. Combined with their great hospitality our adventure to their home was the highlight of our trip to Italy. Well done "Chef"!

This was a great experience! Our chef, Fabrizio, was a great teacher. He was very knowledgeable about cooking, but also about the city of Rome. On our walk to the market he shared so much with us about the area. We were able to use that knowledge throughout our time in Rome. The whole class was filled with great tips and helpful advice about cooking in general, and the recipes were great. I was so involved I didn't take any pictures, which speaks to the incredible experience we had. I can't wait to try to make these dishes on my own. They may not turn out as good at first, but I'm confident I will get it right eventually after the great instruction.
