From meeting for our market tour and learning new things about how to choose fish, meat, and cheeses. It was all so informational and well done by Paulo.. He has a great ability to teach, but in a manner that is exciting and fresh. Onto our cooking class, which was done equally as well. A delicious dinner, great instruction for the how to do. The class flew by and the end product was a delicious dinner I would be proud to serve anyone at home. The venue was lovely, very clean, on point from equipment to clean up. Paola was a gracious host and teacher. The group had a wonderful time mastering techniques and learning little tips and secrets of cooking together. I would not hesitate to do another class through this group. Paulo was excellent, food products all high quality and teaching method educational and fun!

We had so much fun at this class. Paulo was a great teacher. The market visit was great and we learned a lot about cheese and all the French regions and regulations. very interesting. The cooking class was very hands on which we liked. We made salmon tartare (delicious), beef bourguignon and a meringue and cream dessert. all very good and very filling.

Paulo did a fantastic job with the class from start to finish. My daughter and I had a great time, learned a few tips and are looking forward to the next time we take a class at Le Foodist.

This was the best experience tour we’ve ever done. Chef Paulo’s passion for food, respect for sustainable practices, and genuine hospitable nature made this a heartfelt learning experience. The tour started in the St. Germain market where we shopped for the meal’s ingredients, and then we took the metro to the Latin Quarter so we could start cooking. And boy did we cook. Chef Paulo is a pro in the kitchen, but he’s also really good with people. He made the class meaningful for participants at every experience level from pro to novice. This was definitely hands-on learning. We worked in pairs to chop, dice, mix, sear, etc. a three-course meal. There were only 11 of us, so we got to know the other participants, and by the end of the evening we all sat around a lovely farmhouse table with plenty of wine and cheer. It felt like having dinner with friends. The dishes were delicious and definitely something we can recreate at home. I highly recommend Le Foodist classes and would not hesitate to sign up for another one (or even one of their week long immersion courses!)

What a great experience we had cooking dinner at Le Foodist in Paris. I booked the dinner meal as a surprise for my wife on our visit to Paris last week. I'm not much of a cook, but she loves to cook. This class was great for both of us. She was able to utilize her knowledge of food and cooking, and I learned a lot. The setting was cozy and inviting. And our instructor, Paolo, was fantastic. He was very engaging, both when providing the how-to's, but also when talking about food/Paris history, and his very interesting life. And, at the end of the day, the meal was wonderful, from appetizer to dessert. Highly recommended.

We'd never taken a cooking class before so why not start in Paris?! My husband and I went with 2 other couples and there were 2 other women in our group, so the size was a little smaller than normal. Paulo was our guide through the market, as well as the chef. He was very knowledgeable and an excellent teacher as we learned about the AOC standards for wines, cheeses and meats. We sampled some delicious cheese and baguette before taking the metro to the Foodist classroom where we started cooking. After demonstrating techniques, Paulo split us into small groups to prepare different parts of the meal. Our meal consisted of a cauliflower leek soup, Coq au Vin Ballotine, potatoes gratin, a mixture of veggies cut into circles with a melon baller (which was a technique I'd never seen before) and poached pears with homemade ice cream and chocolate ganache for dessert. There was also plenty of good red and white wine to enjoy. It was a fun experience and we left very full! I'd highly recommend this for something unique to do in Paris. My husband has never cooked before and he did a great job so don't be afraid if cooking isn't your forte!

My adult son and I participated in an evening cooking class with Le Foodist and had a wonderful experience! We learned a lot and enjoyed the company of the others participants and the chef Paolo - a truly professional, warm, fun, and delicious night. I highly recommend!

Even with the most magnificent sights, architecture, and history all around us - this was the highlight of our trip. We had so much fun learning about French cooking from Frederick. It was an evening filled with an appreciation for food and wine while surrounded by great company. Fred made us all feel at home and was a patient instructor. We learned techniques that we can apply at home and all played a part in the preparation of a tremendous meal that we can confidently repeat in our own homes. We all left smiling after having spent a lovely time at Le Foodist and made some great new friends. I’d return in a heartbeat!

Our chef-- Paolo-- was wonderful! He was funny and engaging. He started by explaining the dishes to us, then showed us the proper kitchen tools and knives to use, and most importantly how to use them safely. He showed us how to prepare ingredients by illustrating techniques we should use to wash, slice and size them so as to be recipe ready. Tasks were then assigned to each student for completion. Once all food was cooked, we all sat down to enjoy the food we had prepared with Paolo. It was wonderful: the shared food and wine food was delicious; the chef and other students were all interesting people and we had a lot of laughs while getting to know each other. I would highly recommend this class, so much so, that we will undoubtedly take another cooking class when we return to Paris next year.
