Next we will continue to the charming bodega hidden away in the midst of the forest for an insightful tour of the wine-making facilities, walking you through the process of making wine from unique indigenous grape varietals from harvest to maturation. Mogarraz

Our lunch-stop is one of the officially accredited 'most beautiful villages in Spain', perfectly conserved in the natural park of Las Batuecas, with 12–17th century architecture set on the steep side of a hilltop ridge with narrow cobblestone lanes to explore, a charming Plaza Mayor and ancient vines that creep right up to the edge of the buildings. Also notable is a thought-provoking open-air art exhibition of portraits of previous inhabitants of the village attached to the exteriors of the old houses they once occupied – silent witnesses of the slow pace of change in this remote but beautiful outpost. A satisfying 3-course lunch with wine is served in a charming Michelin Guide restaurant featuring exquisite woodfire-grilled meats, fish and other regional produce. After lunch we will visit the winery of a pioneering winemaker for a tour and extensive wine-tasting session.

This was exceptionally well-organised, right from our initial enquiry. Frederico had availability for a private day tour, which meant picking us up from our hotel in Salamanca and driving us around the surrounding countryside to various destinations. For us, it was perfect. Frederico has real depth and breadth of knowledge about wine, history and culture, which he describes and illustrates with passion. We visited two vineyards, drank some impressive wine, and generally had a marvellous time! We would totally recommend.

What a wonderful experience with a charming and knowledgeable host with a decade of experience! Truly more than a tour. We experienced beautiful and seldom visited villages in the Sierra de Salamanca with great old streets, alleys and architecture while learning the history of the area. We went into the vineyards and met with the grower to learn of their ancient techniques of cultivation in a dry climate. We had great wine tasting with varietals that were unknown to us. The midday meal was certainly the finest meal we had in all of Spain with majestic views of the valley below. Everything was included in the price of the tour. Next year we will return with our friends for a multi day excursion into some different regions. This bespoke experience with a passionate and entertaining Don Federico is superb!

The remote terraced vineyards we visited with Don Federico, accompanied by his friend and colleague, the area’s premier viticulturist, were an unexpected delight. Modest and filled with pastoral beauty, accesible only by foot down dusty winding paths, the terraces held secrets of 100 year old vines cultivated since the time of the Romans. We felt like very special guests of honor at the boutique wineries tasting full glasses of white and red wines while savoring jamón and chorizo. We savored detailed, earthly discussions about the wines; how to discern the smells and tastes of the granite, fruits and flowers found among the vines, and how to sip and taste the many layers the wines offered. Lunch at a Michelin-rated restaurant offered a wide variety of the best local roasted meats, accompanied by endless pourings of the local wines we had just become acquainted with. Don Federico is a natural host whose kindness, warmth, and love of Castile and Leon, combined with his deep knowledge of the region’s wine varietals and winemaking techniques, are surpassed only by his Scottish wit and charm as a spinner of tales, told in Spanish, English and Scottish Gaelic. We look forward to our next visit with Don Federico as we explore more of Spain.

This was an amazing trip. Fred is extremely knowledgeable about the area as well as about the nuances with wine varietals. He took every step to tailor the trip to our needs and went all above and beyond to be sure we were enjoying ourselves. Can’t say enough positives. We will be recommending this trip to all.

✍🏼… we have just recently returned to Ireland following a most wonderful few days spent in the capable hands of Don Federico and his beautiful partner Maria Jose touring some boutique wineries not too far from Salamanca

Don Federico and Maria Jose organized a fabulous trip for us to the Sierra de Salamanca wine region followed the next day by a tour of the city of Salamanca and an evening in a castle outside the city. The trip was beautifully organized. The Sierra de Salamanca is a beautiful area we never would have found on our own. The wines were amazing and the winemakers were charming and passionate about what they do. We’ve been so upbeat about our experience that relatives are already asking us to organize a similar tour for them. Throughout our two days together, Don Federico was a charming, knowledgeable and considerate host. He even gave us excellent recommendations about bars and restaurants to visit in Madrid. I have one recommendation. It would be useful for visitors from the US if the company would accept credit cards. Doing a wire transfer was a bit of a hassle. Moreover, we don’t usually buy travel insurance because our credit card provides insurance coverage. We would have gladly paid a little extra for that convenience. Otherwise, we have nothing but praise for this experience.

As someone who has lived most of my life in California, I have visited many wineries but I had one of the best experiences on this tour with Fred (aka Don Federico) and Maria Jose. It was a well planned tour in a very comfortable car with visits to two small villages, vineyards and a winery. Fred told us a great deal about the history of the area and the grapes of Sierra de Francia. Maria Jose chose a wonderful restaurant with great local food. When I am in Salamanca in the future, I would like to take another tour with them.

Part I Go with the flow! This is a Spanish phrase I learnt during my 3-week Spanish course in Salamanca and could truly reflect this amazing wine tasting experience! Thanks for Fred and Maria who took me and my friends to an intimate authentic wine tasting experience. While the weather was not so good as we wanted it to be, we felt sooooo lucky for taking on the tour where not only we were given a wealth of history of Salamanca wines (which I think is important for us to appreciate its delicacy) and the opportunity to come to such an authentic winery with small production (its beauty is that the winery puts their heart to the wines and each and every grape is hand-picked!), but also the attentiveness of two amazing guides throughout the tour. Fred was very knowledgable and so full of energy and enthusiastic, taking pics for us and explaining everything! Maria has done a great job and the amazing lunch at the beautiful village was jaw-dropping and I was so full! Despite the rain, the medieval villages we visited were still so pretty and the rain indeed added some romantic elements in it! This is an authentic experience for which you wouldn’t find in other wine tour! Dejarse llevar ...... we can’t change the weather but our jubilation brought by the tour was in no way affected by the weather! Thanks Fred and Maria for bringing us this amazing experience! Part II You can’t believe how sweet and thoughtful Fred and Maria are! While those good memories of the wine tour are still lingering in my head, great pics had been silently slipped into my email box! These pics were not only well shot but also witnessed the happy faces of each and every one of us ! Dejarse llevar .... thanks both!
