My husband and I did a three-hour private walking tour with Elena. We loved her passion and enthusiasm for Valencia. We felt like we learned a lot. At the end, she went an extra step by calling ahead to a restaurant that was just opening for the day and telling them that a party of two would be coming for Valencian paella, which apparently takes an hour to make. So, we got there, had an appetizer, then our paella was ready.
