Recognizing the potential of the land, Aimé and Véronique sought the advice of Professor Henri Enjalbert, a geologist from the University of Bordeaux. Enjalbert's assessment revealed the soil to be composed of glacial sandstone, similar to that found in Burgundy's Côte d'Or, suggesting the possibility of producing exceptional red wines. Inspired by this discovery, the Guiberts embarked on a mission to create world-class wines in the Languedoc. They planted a diverse selection of grape varietals, including Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah, Pinot Noir, Chardonnay, Viognier, and Petit Manseng. A taxi from Aniane to the winery will cost around €15-€20.
