After three days of primary fermentation, the beer matures at 0°C for at least 21 days, developing its signature malty, full-bodied flavor. Limited to 120 days shelf life, this commitment to freshness defines its unique taste profile.

The brewery employs its own well water and premium natural ingredients, including Hallertau aroma hops added in three stages for balanced bitterness and fruity notes. Post-mashing, the wort is boiled, fermented, and gently filtered to retain maximum flavor without pasteurization. Mühlen Kölsch arrives fresh at tables in traditional 0.2-liter Stange glasses, served by Köbes—waiters in traditional vests.
