Today was a day for wandering, for letting Seville whisper its stories to us. Maximilian and I set out with no rigid plan, just a desire to absorb the city's atmosphere and stumble upon its hidden gems. It's funny how sometimes the best travel experiences are the unplanned ones, the moments where you simply allow yourself to be led by curiosity.
Our first stop was the Archivo de Indias, a place I'd been particularly eager to visit. As a software developer, I'm used to dealing with data, but nothing quite compares to the tangible weight of history held within these archives. It was established in 1785 to centralize documents related to Spain's overseas empire. The sheer volume of documents – over 80 million pages – is staggering! To think that within these walls lie the records of explorers, conquistadors, and the countless individuals who shaped the New World is humbling.

We opted for the tasting menu, which was a culinary journey through the flavors of Andalusia. Each dish was a work of art, beautifully presented and bursting with flavor. I particularly enjoyed the slow-cooked egg and the roasted suckling pig. Maximilian, a true wine enthusiast, was impressed by the extensive wine list and the sommelier's recommendations.

The walls were lined with old sherry barrels, and the air was filled with the aroma of tapas and conversation. It felt like stepping back in time, a glimpse into Seville's vibrant past.

I particularly enjoyed the Iberico ham and the seafood dishes. It was a fitting end to a day of exploring Seville's culinary and historical treasures.

As we walked back to our hotel, the Itaca Artemisa by Soho Boutique, under the starlit sky, I couldn't help but feel grateful for the experiences of the day. I am also grateful that I was able to share these experiences with Maximilian, who always makes travelling so much more enjoyable.
