A Day of Discovery in Imerovigli
Today was a day of exploring the less-trodden paths of Santorini, a journey filled with historical intrigue, stunning vistas, and of course, delightful culinary experiences. Leaving the familiar comforts of Pyrgos, we ventured towards Imerovigli, a village known for its breathtaking views and serene atmosphere. It was a day to remember, filled with moments that captured the essence of Santorini's unique charm.
Our adventure began with a hearty breakfast at Soul by Splash. The restaurant was right on the beach promenade, and while it offered meat options, I was pleased to see several vegetarian dishes clearly marked, some of which could even be veganized. It was a lovely start to the day, fueling us up for the explorations ahead.

Skaros Rock: A Journey Through Time
Our first major stop was Skaros Rock. As we approached, the sheer magnitude of this rock formation was astounding. Skaros Rock isn't just a geological marvel; it's a place steeped in history. Formed by volcanic activity thousands of years ago, it served as a strategic defensive location for centuries. I learned that in the 13th century, the Byzantine Empire fortified it, and it later became the Venetian capital of Santorini. I could only imagine what it must have been like to live here back then. Kati was particularly fascinated by the stories of pirate raids and how Skaros managed to remain unconquered due to its strategic location. It was a steep walk down and even steeper back up, but the views were more than worth it. Hans, ever the architect, was captivated by the remnants of the old buildings and tried to imagine how they were constructed and how people lived within those walls.

The hike to Skaros Rock was moderately challenging but incredibly rewarding. The trail, beginning near Agios Georgios Church in Imerovigli, was well-marked. As we walked, the panoramic views of the Aegean Sea unfolded before us, making every step worthwhile. We learned that Skaros was once the most important of Santorini's five fortified settlements, serving as a refuge from pirates. It was amazing to think that this now-uninhabited rock was once a bustling medieval capital. As we explored the ruins, we found a small church, the Chapel of Agios Ioannis Apokefalistheis, clinging to the north side of the rock. It was a peaceful spot, offering a moment of reflection amidst the rugged landscape.
Exploring Imerovigli: The Balcony of the Aegean
After conquering Skaros Rock, we strolled through the charming village of Imerovigli. Known as the balcony of the Aegean, Imerovigli lived up to its name with its stunning views and tranquil atmosphere. The village is perched on the caldera cliffs, offering unparalleled vistas of the Aegean Sea and the volcanic islands. Unlike the bustling streets of Oia or Fira, Imerovigli provided a quieter, more intimate setting to soak in the scenery. We wandered through the narrow, winding pathways, admiring the iconic blue-domed churches and whitewashed houses that seemed to cascade down the cliffs. The architecture was simply breathtaking, each building a testament to the island's unique style and history. Imerovigli seemed to invite you to slow down, to breathe in the fresh air, and to simply be present in the moment. We explored the blue-domed churches, marveling at their beauty and the sense of tranquility they exuded. Lunch was a delightful experience at Kapari Wine Restaurant. Located in the upscale village of Imerovigli, the restaurant offered breathtaking views of the Caldera Cliffs and the deep blue Aegean Sea. The setting was simply magical, with the colors of the sky blending seamlessly with the shades of the sea. The restaurant's commitment to using local ingredients was evident in every dish we tasted. The menu consisted of well-known classics, and we savored a variety of well-known and awarded wines from both Santorini and all over the world. The service was impeccable, with the staff being friendly, supportive, and always smiling. I especially enjoyed the shrimp roll and the dessert. Hans, a wine enthusiast, was in his element, sampling the local wines and learning about the island's viticulture. Kati, always adventurous, tried some of the more exotic dishes and declared them delicious. The restaurant is nestled within the Kapari Natural Resort, and you could really see the care they put into the experience. It was a bit cooler as the sun began to set, so I was glad I had brought my light jacket.

As evening approached, we made our way to Lycabettus Restaurant for dinner. The romantic atmosphere was perfect for couples, and the balcony provided iconic blue views of the countless stars above. The dedicated team delivered impeccable service, making our experience nothing less than exceptional. The innovative cuisine was a treat for the senses, and the presentation was as impressive as the taste. Although some reviews mention that the prices are high, we felt that the experience was worth it.

Tomorrow, we plan to visit Sunset Oia and Ammoudi Bay, followed by a farewell dinner at Throubi Restaurant at Andronis Concept and drinks at Tango Champagne & Cocktail Bar. It promises to be a memorable end to our Santorini adventure.
