Today, Orvieto revealed more of its captivating layers. It was a day of venturing into the city's depths, both literally and figuratively, as we explored ancient wells and delved into its rich historical tapestry. The experiences were punctuated by delightful culinary interludes, making it a day of sensory and intellectual fulfillment. Each corner of this city seems to whisper stories of civilizations past, and I was eager to listen.
Our day began with a hearty breakfast at Ristorante L'antica Rupe. The aroma of freshly baked bread and strong Italian coffee filled the air, setting the perfect tone for a day of exploration. The restaurant, tucked away on a quiet street, exuded a rustic charm that immediately made us feel at home. It’s amazing how a simple breakfast can become a cherished memory when shared in such a beautiful setting. I opted for a classic cornetto and cappuccino, while Hans enjoyed a selection of local cheeses and cured meats. Sophie, ever the adventurous one, tried a slice of torta della nonna, declaring it the best cake she'd ever tasted. I must admit, I had a bite and had to agree!

With our appetites sated, we set off to explore the Pozzo della Cava. This ancient well, steeped in history, offered a fascinating glimpse into Orvieto's past. As we descended into the depths, the temperature noticeably dropped, and the air grew heavy with the scent of damp earth. The well itself is an engineering marvel, a testament to the ingenuity of the Etruscans and later the Renaissance engineers who expanded it. The Pozzo della Cava dates back to the Etruscan period, around the 3rd century BCE. The Etruscans, known for their advanced engineering skills, initially constructed the well to provide a reliable water source for Orvieto's inhabitants.

The guide shared intriguing anecdotes about the well's construction and its role in Orvieto's history. I learned that Pope Clement VII, fleeing from the Sack of Rome in 1527, commissioned the expansion of the well to ensure the city had a secure water supply in case of a siege. It's fascinating to think that this well, hidden beneath the bustling streets of Orvieto, played a crucial role in the city's survival. The complex is composed of two parts: the first, the largest, is circular and has an average diameter of 3.4m, the second part is smaller and rectangular, with walls measuring 60cm x 80cm. It has small footholds carved into the wall that enabled people to go up and down using their elbows, feet and knees. These footholds or “pederols” are typically Etruscan. The spring water naturally reaches the source at a depth of 36 metres. The oldest part dates back to the IV-V century BC. It is one of the numerous wells built by the Etruscans to allow the excavation and inspection of the network of tunnels for the collection of infiltration water, included in the Global Network of Water Museums. The same man, with his family, has excavated and made accessible also the nine caves around the well, without any public funding. Now the archaeological complex of Pozzo della Cava is a rare example of a national monument in Italy that is entirely privately owned. Through the caves it's possible to see some butti, small medieval pits used to dispose of rubbish, the remains of some ancient Etruscan burial tombs, and also one of the large pillars that formed the foundations of the medieval Filippeschi tower.

Emerging from the depths of the Pozzo della Cava, we made our way to Campo della Fiera, an archaeological site believed to be the location of the Fanum Voltumnae, the most important Etruscan sanctuary. The site is located at the base of the cliff of Orvieto, where finds have been discovered that date back to the Etruscan, Roman and medieval ages. The most conspicuous part of the finds dates back to the Etruscan age; remains of some temples, buildings, fonteane and roads have been found. These finds suggest that the site corresponds to the Etruscan one of the Fanum Voltumnae, that is, the federal religious site of the Etruscan dodecapoli. The identification with the remains in the plain today known as Campo della Fiera, below the cliff of Orvieto, generally identified with Velzna (Volsinii Veteres), derives from the excavations conducted by the University of Macerata since 2000. These have made it possible to recognize a vast sanctuary: a temple, of which the podium remains in square work in tuff (VI-IV century BC) and the floor in signino of a later phase of the Roman era (II century BC), the boundary wall, arrangements with wells and fountains and two wide roads, one probably directed to Bolsena and the second which behind the temple leads to the upper part of the hill. At the Roman time the remains of a thermal building and a residence of the Augustan age where floor mosaics have been found date back, while to the medieval one the remains of a church (San Pietro in Vetere), built on a previous sacred area of the sanctuary: the church refers to a first floor of the fourth century, a second mosaic floor of the fifth-sixth century and remains of the building rebuilt in the twelfth century.

The site exuded a sense of reverence, a reminder of the deep spiritual connection the Etruscans had with their land. The staff are incredibly friendly and welcoming, and the food is a mix of Mediterranean and Italian dishes that are unique and delicious. The best pizza I've had in a looong time! I had their namesake San Michele pizza and it was delicious. My friends enjoyed what the pizza and pasta that they ordered too. The service and people were so kind and patient. We arrived quite late and they were almost closing but they agreed to seat us and were still so welcoming and friendly.

I opted for the spaghetti alla carbonara, a classic Roman dish that never fails to satisfy. Hans chose the osso buco, a hearty Milanese specialty, while Sophie, in a moment of uncharacteristic restraint, ordered a simple margherita pizza. Each dish was a testament to the trattoria's commitment to quality and authenticity. The pasta was perfectly al dente, the sauce rich and creamy, and the pizza crust thin and crispy. This shop offers stunning handmade lamps and other wood products. They feature olive wood, but also work in Pear, Apricot, Maple, Walnut and many other fine woods. As you step inside, you'll be greeted by the warm, inviting scent of finely crafted wooden products, each piece telling its own story of craftsmanship and dedication. The friendly staff is always ready to share insights about the artisans behind the products, providing a deeper understanding of the art of olive wood crafting.

The scent of olive wood filled the air, and the shelves were lined with beautifully crafted bowls, utensils, and decorative items. I couldn't resist purchasing a small olive wood cutting board, a perfect memento of our time in Orvieto. Hans, ever practical, bought a set of olive wood spoons, while Sophie chose a delicate olive wood pendant. It’s a lovely reminder of the craftsmanship that thrives in this region and a perfect keepsake for us all.
As evening approached, we made our way to I Sette Consoli for dinner. This highly-regarded restaurant promised a culinary experience to remember, and it certainly delivered. From 1992, only what our Land gives, at the right time, with the right techniques, without overdoing it or wanting to surprise at all costs: this we think is the True Cuisine. The restaurant also offers a pleasant outdoor space in the beautiful season. The garden, intimate and silent, opens into an internal courtyard which constituted the ancient vegetable garden of the adjacent Church of Sant'Angelo, whose main entrance once overlooked this courtyard. We were greeted by the warm and attentive staff, who guided us to a table overlooking the restaurant's charming garden. The ambiance was elegant yet relaxed, perfect for a special evening with family.
