The Bisschopsmolen stands as a testament to centuries of craftsmanship in the heart of Maastricht's Jekerkwartier. Originally built in the 11th century, this water mill was once owned by Godfried van Bouillon and later by the Prince-Bishop of Liège. Today, it represents a living connection between three generations of traditional Dutch food production: the farmer, the miller, and the baker. Since 2005, the restored mill has been reunited with an artisanal bakery, creating a complete heritage experience where visitors can witness the entire process from grain to finished product.

The Spelt Revolution

Bisschopsmolen holds the distinction of being the Netherlands' first 100% spelt bakery. The operation mills Kollenberger Spelt, an ancient grain variety, using the restored water mill's traditional machinery.
