From Interlaken Ost train station, take a train towards Spiez. The journey will take approximately 20 minutes. Once you arrive at Spiez station, exit the station and follow the signs towards the lake. Walk straight for about 500 meters along the lakeside promenade until you reach Schlossstrasse. Turn left on Schlossstrasse and walk about 200 meters until you see Schloss Spiez on your right.
