Daria and Michael were the ultimate hosts.
From pick-up at the cruise port to returning to our ship at the end of the afternoon; we were treated like friends. We prepared some tasty dishes, using herbs and spices from Daria’s beautiful yard. This is a must do experience for foodies!

My husband, brother-in-law and I were so happy that we did the Caribbean Cooking Class with Daria. We were fortunate that there was only one other couple with us. We enjoyed making fresh, garden to table foods. Daria explained everything as we prepared the meals. She also took into consideration our food allergies and preferences. While the food was cooking, Daria introduced us to different types of flavored rum and the medicinal purposes of herbs and spices. We learned a lot.
It was such a wonderful experience as we were welcomed into her and her husband’s, (Michael) beautiful home. It was topped off by a great buffet family style meal and good conversation. We will definitely take this class again the next time we visit Dominica.

We got picked up just outside the port by a van that had the ability to carry my scooter. We were taken to a beautiful home at the top of the mountain. Daria and her staff met us in her garden, which surrounds a beautiful outdoor kitchen. Our group was 4 out of the 12 people who did the class, and we were all very comfortable in the space.
The sheer number of spices she used in the dishes she taught us to prepare was stunning. Most of them were grown in her own garden, so the flavors were that much more pungent.
We are gluten and dairy intolerant, so she actually made versions of the same dishes separately for us. We made sweet curry chicken and rice, fried and boiled plantains, for the vegetarians there was eggplant stuffed with a lentil mixture.
She made icey ice cream with home grown chocolate in it and sprinkled on top. So delicious!
It was a day of sensory tasting delight, and none of it would have been possible without the gregarious and detail oriented chef who created the cooking experience for us… Daria (Day-ree-ah)
There was a part at the end about the healing qualities of the different herbs and plants on the island. We tasted soursop and others that native Dominicans have used for centuries to heal the body.
We ended up purchasing several of her spice blends and her beautiful cookbook which is really beautifully illustrated. I also bought a beautiful apron!

This was an unique experience that was fun, tasty and educational. They provided easy transport from the port to a beautiful hill side home where we participated in preparing a gourmet meal. From the covered outdoor kitchen we watched, listened and learned to cook with fresh herbs, vegetables, and fruits. Daria is knowledgeable about local and exotic cuisines. The food was delicious! Rum punch was included. I would definitely do it again.

If guests arrive at the Roseau Bay Front we will meet you at the entrance to the Fort Young Hotel, which is across from the arrival port.
If guests arrive at the Woodbridge Bay we pick up at the main (security) entrance gate. Guests are to remain inside the security area.
If guests are on island and at another hotel, we can arrange a more convenient rendezvous.
