What to expect

When you think about Japanese traditional food, probably Sushi, tempura, and soba will come to your mind . Among Soba, Shinshu(old name of Nagano) soba is used for soba produced in Nagano Prefecture. This land has been famous for soba since ancient times. Nagano is a mountainous prefecture which doesn’t have many flat fields. Fortunately, soba is best suited for cultivation in high-and-cold regions. That’s why good quality soba has been cultivated on the slopes of the mountains in Nagano. In this restaurant, we peel off the soba husk by ourselves and grind the soba flour using a millstone and water mill. Karuizawa is famous for Walnut soba. It is one of the ways to eat Shinshu soba by putting ground walnuts in the soba soup. After today’s experience, we will serve the dish with the walnuts in a small mortar, so if you are interested, you can try grinding the walnuts yourself and adding them to the soba soup.
