As my Norwegian adventure draws to a close, I find myself reflecting on the incredible experiences of the past eleven days. Today, I embraced the serene coastal landscapes and savored the local flavors of Senja Island, creating memories that will undoubtedly last a lifetime. It's hard to believe this journey is ending, but I’m determined to make the most of every last moment.
The morning began with a hearty breakfast at Fjøsn Restaurant & Bar. The restaurant is located at the Aurora Borealis Observatory. I decided to try some local delicacies. Fjøsn, translating to 'The Barn' from Norwegian, was once a goat barn. The restaurant has a New York loft-inspired design with high ceilings and large windows. The restaurant uses local and fresh produce. It was a fitting start to the day, fueling me for the coastal explorations ahead. The warm ambiance and delicious food set a positive tone as I prepared to bid farewell to this enchanting island.

The location offers short distances to nature experiences, fishing, hiking, and beaches. The building has a small room with a double bed and a private bathroom. Senja has been harvesting from nature for centuries. I savored a delicious meal featuring freshly caught seafood and locally sourced vegetables. The flavors were exquisite, a true reflection of Senja's culinary heritage. The chef shared stories about the origins of the dishes, adding a personal touch to the dining experience. It was a delightful culinary journey, one that deepened my appreciation for Norwegian cuisine and the island's rich food culture.

Before heading back, I made a stop at Gammelbutikken i Skrolsvik, a charming old general store that now serves as a museum, souvenir shop, and café. The store was built in the 1870s. The store sold food, equipment, clothes, and fishing gear. The second floor was used as accommodation for fishermen. The furnishings are the originals from 1925. Gammelbutikken is a combination of museum, souvenir shop, and cafe. The shop serves baked goods, coffee, drinks, ice cream, and old-fashioned candy. The building also has handcrafted goods from local artists. I stepped inside, and it felt like stepping back in time. The store was filled with vintage items, local crafts, and the aroma of freshly baked goods. I browsed through the collection of souvenirs, picking up a few unique mementos to remind me of my Senja adventure. I also indulged in a delicious waffle and a cup of coffee, savoring the cozy atmosphere and the friendly chatter of the locals. The village of Skrolsvik has been active with fish purchases, exports, and the old store. The Skrolsvik is known for its halibut fishing in Andfjorden. The store also functioned as an office for the local fish landing factory.

The harbor side is more mild and sunny. I enjoyed a sumptuous meal featuring local seafood and traditional Norwegian dishes. The flavors were rich and satisfying, a perfect ending to my culinary journey through Senja. As I savored each bite, I reflected on the incredible experiences of the past eleven days, feeling grateful for the opportunity to explore this hidden gem of Norway.

Tomorrow marks the end of my trip. I'll be heading back to Tromsø, then flying home to Dublin. It's always a little bittersweet to leave a place you've grown to love, but I know I'll be taking a piece of Senja with me.
This trip has given me so much inspiration, and I can't wait to get back to Dublin and try out some new recipes at the restaurant, inspired by the fresh, local ingredients I've encountered here. Maybe I'll even try my hand at making *rekling*, the dried halibut delicacy from Skrolsvik. Aoife will certainly appreciate that, as she loves trying new things in the kitchen. And who knows, maybe I'll even start growing some Norwegian herbs in my garden back in Dublin. The possibilities are endless!
