Beneath the Surface, Above the Stars

Today marked the first day of our Bajan adventure, a journey I've eagerly anticipated sharing with Aisha and Ethan. As a Bajan returning to my roots, I wanted to ensure my family experienced the authentic Barbados I remember and cherish, while creating new memories together. It was a day of subterranean exploration, culinary delights, and the warmth of Bajan hospitality.

Our day began with a hearty breakfast at Artsplash Cafe. I'd heard great things about their healthy options and local flavors, a perfect start to immerse ourselves in the island vibe. The cafe was buzzing with activity, a mix of locals and tourists all eager to start their day. Aisha opted for a smoothie packed with tropical fruits, while Ethan, ever the traditionalist, went for pancakes. I, of course, had to sample the Bajan breakfast – saltfish and bakes. It was a taste of nostalgia, instantly transporting me back to my childhood in Speightstown. The sea-view veranda provided a stunning backdrop as we enjoyed our meal, the gentle sea breeze a welcome contrast to Toronto's early September chill. Artsplash is more than just a cafe; it's a community hub, a place where art, food, and culture intertwine. The vibrant artwork on display added to the cheerful atmosphere, and we even caught a glimpse of the local farmers setting up for their market later in the day.

Fueled and ready, we set off for Harrison's Cave Eco-Adventure Park. The drive itself was an experience, the lush green landscape a stark contrast to the urban sprawl of Toronto. As we approached the cave, Ethan's excitement was palpable. He's been studying caves in school, and the prospect of exploring a real one filled him with anticipation. Harrison's Cave has transformed since I last visited. What was once primarily known for its tram tours has evolved into a full-fledged eco-adventure park, offering ziplining, challenge courses, and nature trails. We opted for the signature tram tour, a comfortable and informative way to delve into the heart of the cave.

As the tram descended into the depths, the temperature dropped noticeably, a refreshing change from the Bajan heat. The cave was breathtaking, a subterranean wonderland of stalactites, stalagmites, and crystal-clear pools. Ethan was mesmerized, peppering our guide with questions about the cave's formation and the creatures that call it home. Aisha, always the photographer, snapped away, capturing the stunning geological formations. I found myself equally captivated, marveling at the natural beauty of this underground world. The Great Hall was particularly impressive, a massive cavern with towering stalactites that seemed to defy gravity. The Village, where stalactites and stalagmites had joined to form impressive columns, was another highlight. Our guide, a knowledgeable Bajan with a contagious enthusiasm, shared fascinating insights into the cave's history and geology. He explained how the cave was formed over millennia by the slow dissolution of limestone rock, and how the stalactites and stalagmites grow at a rate of just a few centimeters per century.

To walk in nature is to witness a thousand miracles.

Emerging from the cave, we were greeted by the warm Bajan sun. We spent some time exploring the eco-adventure park's other offerings. Ethan, ever the adventurous one, was keen to try the Monkey Zipline, but Aisha, with her registered nurse sensibilities, gently steered him towards the nature trail. The trail wound through a lush tropical gully, home to a variety of plant and animal life. We spotted several Barbados Green Monkeys, playful creatures that Ethan was thrilled to observe in their natural habitat. Aisha, a keen botanist, identified various plant species, sharing her knowledge with Ethan. It was a wonderful opportunity for us to connect with nature and learn more about the island's biodiversity.

Lunch took us to the Animal Flower Cave & Restaurant, located at the northernmost point of Barbados in the parish of St. Lucy. The drive was scenic, offering panoramic views of the rugged coastline. The Animal Flower Cave is named after the sea anemones found in its pools, and the cave itself is estimated to be between 400,000 and 500,000 years old. We explored the cave briefly, marveling at the rock formations and the crashing waves outside. The restaurant, perched on a cliff top, offered breathtaking ocean views. We enjoyed a delicious Bajan lunch, sampling local delicacies like flying fish and cou-cou. The restaurant prides itself on using locally sourced produce, and the flavors were fresh and authentic. Ethan, surprisingly, devoured the flying fish, declaring it his new favorite food. Aisha and I savored the cou-cou, a traditional Bajan dish made from cornmeal and okra. The sea breeze and the stunning scenery made for an unforgettable dining experience.

In the late afternoon, we made a stop at the Best of Barbados Gift Shop. I wanted to find a few souvenirs to take back to Toronto, something to remind us of our Bajan adventure. The shop was filled with locally made crafts, artwork, and souvenirs. Aisha admired the hand-painted ceramics, while Ethan was drawn to the colorful T-shirts. I picked up a few bottles of Bajan hot sauce, a must-have for any Caribbean food lover. The staff were friendly and helpful, offering insights into the local artwork and crafts. We learned that the Best of Barbados Gift Shop is a family business, featuring the work of three generations of Barbadian artists. It was heartwarming to support local artisans and take home a piece of Bajan culture.

As the sun began to set, we headed to Champers Restaurant Barbados for dinner. Located on the south coast, Champers is known for its fine dining and romantic atmosphere. The restaurant overlooks the water's edge, offering picturesque views. We were seated on the open-air terrace, the sound of the waves providing a soothing soundtrack to our meal. The ambiance was elegant yet relaxed, perfect for a special occasion. We started with cocktails, Aisha opting for a classic rum punch, while I tried a local specialty. For dinner, I chose the grilled yellowfin tuna, while Aisha went for the Cajun mahi-mahi. Ethan, surprisingly adventurous, ordered the catch of the day. The food was exquisite, the flavors a perfect blend of Caribbean and international influences. The service was impeccable, the staff attentive and friendly. Champers is also known for showcasing local and Caribbean artists in its art gallery, adding a cultural dimension to the dining experience.
