Summiting Kopasz Hill and Sipping History at Götz Pincészet
Today was a day of contrasts, a journey from the panoramic heights of Tokaj to the cool, cavernous depths of its historic wine cellars. It was a day to breathe in the fresh air and to savor the rich tastes of this unique region. A day that reminded me why I embarked on this solo adventure in the first place.
The morning began with a hearty breakfast at LaBor Bistro & boutique hotel. I enjoyed a selection of local cheeses and freshly baked bread, fueling up for the day's adventures. The charming atmosphere of the bistro, combined with the delicious food, was the perfect start. It’s always the little things that make a place memorable.
My first destination was Kopasz Hill, the iconic peak that dominates the Tokaj landscape. The hike up was invigorating, the trail winding through lush greenery and offering glimpses of the vineyards below. The air was crisp and clean, carrying the scent of wildflowers and damp earth. As I ascended, I couldn't help but reflect on the history of this land, imagining the generations of winemakers who had toiled on these slopes. I made sure to bring my camera to capture the spectacular views from the top [I'm glad I remembered it, unlike my sunglasses].
Reaching the summit of Kopasz Hill was a rewarding experience. The panoramic views were breathtaking, stretching across the rolling hills of the Tokaj Wine Region. From this vantage point, I could see the confluence of the Tisza and Bodrog rivers, a sight that has shaped the region's history and identity. I spent some time simply soaking in the beauty, feeling a sense of peace and connection with the land. According to Hello Hungary, the hill was for a long time called Kopasz-hegy (Kopasz Hill) because it was practically covered with vines everywhere. I could certainly see why!

Sometimes, the greatest journeys are those that take you to new heights, both literally and figuratively.
After descending from Kopasz Hill, it was time to immerse myself in the world of Tokaj wine. My next stop was Götz Pincészet Gombos-hegyi Pincesor, a family-run winery known for its traditional methods and high-quality wines. The winery is located in Hercegkút, a charming village a few kilometers from Sárospatak. The Gombos-hegyi Pincesor, where Götz Pincészet is located, is a UNESCO World Heritage site, boasting a collection of historic cellars carved into the hillside.
I arrived at Götz Pincészet and was immediately greeted by the warm hospitality of the Götz family. They welcomed me into their cellar, a cool and atmospheric space carved into the riolite tuff. The air was thick with the scent of oak and aging wine, a testament to the rich history and tradition of Tokaj winemaking. According to Gotz Pincészet, the cellar maintains a constant temperature of 9°C throughout the year, which is ideal for aging their wines.

The family shared their story, explaining how they have been making wine in the Tokaj region for generations. Their passion for their craft was evident in every word, and I felt a deep respect for their dedication to preserving the traditions of Tokaj winemaking. They produce all types of Tokaj wine on their 17 hectares of vineyards, including the traditional Tokaji szamorodni and Aszu wines.
Of course, no visit to a Tokaj winery would be complete without a tasting. The Götz family guided me through a selection of their finest wines, each one a unique expression of the Tokaj terroir. From the crisp and refreshing Furmint to the rich and complex Aszú, each wine told a story of the land and the people who crafted it. The Sárgamuskotály was a particular highlight, with its intense aromas and elegant acidity. I savored each sip, appreciating the skill and artistry that went into creating these exceptional wines. It was fascinating to learn about the different grape varieties and the unique winemaking techniques that make Tokaj wines so special.
After the wine tasting, I enjoyed a leisurely lunch at Bonchidai Étterem. Situated on the banks of the river, it offered a picturesque setting to savor traditional Hungarian cuisine. I opted for the Halászlé, a hearty fish soup that was both flavorful and comforting. Sipping the soup while looking out over the tranquil waters of the river was a perfect moment of culinary bliss. According to CarpeDiemEire, the restaurant sits on the banks of the river, where they had the famous Hungarian fish soup Halaszle, followed by Rantott Hus, the Hungarian version of Schnitzel. I can certainly vouch for the Halaszle!

As evening approached, I decided to explore the nightlife of Tokaj. I ventured to MURCI, a local bar known for its relaxed atmosphere and extensive selection of local wines. It was a great place to unwind after a day of hiking and wine tasting, and I enjoyed chatting with the locals and fellow travelers. I sampled a few more Tokaj wines, each one offering a different perspective on the region's terroir. It was a delightful way to end the day, soaking in the vibrant atmosphere of Tokaj.

For dinner, I chose Rákóczi Pince, a historic cellar dating back to the 15th century. The atmosphere was magical, with candlelit tables and ancient stone walls creating a sense of timeless elegance. I enjoyed a traditional Hungarian meal, paired with a selection of Rákóczi Pince's finest wines. The food was delicious, and the wine was exquisite, making for a truly memorable dining experience. I felt like I was stepping back in time, savoring the flavors of centuries past. According to Tokaj Turizmus, the Rákóczi Cellar is a real sanctuary of Tokaj wines.

I had tasted exquisite wines, savored delicious food, and connected with the people who call this place home. It was a day that I would cherish for years to come.
Tomorrow, I plan to visit Tokaj Classic Winery, Ltd gold medal winner and Royal Tokaji Borászati Zrt.
