Laurent Gerbaud: Chocolate as Art

Laurent Gerbaud, the grandson of bakers and pastry chefs, initially studied Medieval history before training as a confectioner and chocolate maker. His travels in China inspired him to create chocolates with less sugar and unique spice infusions. Located on Rue Ravenstein, a short walk from Mont des Arts and opposite Bozar, the shop is bright and modern, inviting visitors to explore a different approach to chocolate. Gerbaud's chocolates stand out due to their reduced sugar content and the use of spices, herbs, and fruits, creating a sophisticated and less sweet flavor profile. The shop's logo, resembling the Chinese logogram for “chocolate”, reflects Gerbaud's time in China and his inspiration from Asian flavors. Laurent Gerbaud offers a wide range of chocolates, from classic pralines to innovative combinations with nuts and dried fruits. The shop also features a small tea room where visitors can savor the chocolates with a cup of tea or coffee. Laurent Gerbaud also conducts chocolate tasting and making workshops.
