    Discover more about Laurent Gerbaud

Laurent Gerbaud is not your typical Belgian chocolatier. Eschewing overly sweet flavors, Gerbaud creates chocolates with a focus on unique flavor combinations, incorporating spices, exotic fruits, and high-quality cocoa beans. His approach stems from a two-year journey in Shanghai, which instilled in him a desire to create less sugary and more adventurous chocolates. Laurent Gerbaud's shop is located a short walk from Mont des Arts in Brussels. The shop itself is bright and modern, featuring a small tea room where you can taste Gerbaud's creations. All chocolates are handmade in the workshop located just behind the counter. Gerbaud was voted best chocolatier in Brussels by Gault et Millau in 2021. Gerbaud's background is as unique as his chocolates. He initially studied medieval history and law. However, he also took evening classes to become a baker, confectioner, and chocolate maker. This diverse background informs his experimental approach to chocolate making. He uses no added sugar, additives, butter, or alcohol in his chocolates.
