Kolossi Castle, located near Limassol, Cyprus, is a well-preserved example of military architecture with a rich history dating back to the Crusades. Originally constructed in the 13th century by the Knights Hospitallers, the castle served as a crucial stronghold and command center. In 1210, King Hugh I gave the land to the Knights Hospitallers, who built the first castle. Due to rivalry within the Crusader Kingdom, the castle was briefly held by the Knights Templar in 1306 before returning to the Hospitallers in 1313. The present castle was built in 1454 by Louis de Magnac, whose coat of arms is still visible on the walls. The three-story keep stands 21 meters high and features a square bailey. Visitors can explore the castle's interior, including the basement and roof, which offers panoramic views of the surrounding area. Kolossi was also an important economic center, known for its sugarcane production and the production of Commandaria wine. This sweet dessert wine has been produced in the region for centuries and is considered one of the oldest named wines in the world. According to legend, Richard the Lionheart declared Commandaria to be the "wine of kings and the king of wines" during his wedding banquet in Limassol. Today, visitors can also see the ruins of a 14th-century sugar mill next to the castle.
