The grapes are harvested by hand, ensuring the highest quality and careful selection. The winemaking process at Château La Canorgue is a harmonious blend of tradition and innovation. The white varietals are harvested in the early morning or at night to preserve their freshness. Both white and rosé wines are gently pressed, and the must is left to settle in fermentation tanks at a cool temperature. The Margans prefer the direct press method for their rosés, believing it yields finer and more delicate wines. The red wines are destemmed and transferred to tanks, where they undergo whole grape fermentation. The wines are then aged in a combination of tanks, foudres, demi-muids, and amphora, depending on the cuvée.
