The estate is currently managed by Christine and Vincent, who took over in 2007 and have since implemented new agricultural techniques to preserve the soil and biodiversity.The winery's vineyards primarily consist of Pinot Meunier, along with Pinot Noir and Chardonnay. What sets Piot-Sévillano apart is their commitment to sustainable viticulture, holding both the High Environmental Value (HVE) certification since 2015 and Organic Agriculture label since 2023. They avoid pesticides and herbicides, opting for manual labor and even employing horses to maintain the vineyards.Visitors can explore the estate through guided tours of the vineyard, pressing center, winery, and cellars, followed by a tasting of their signature Champagnes.
