With a winemaking heritage that stretches back ten generations, the Piot-Sévillano family has been crafting exceptional Champagnes since 1954. The estate is currently managed by Christine and Vincent, who took over in 2007 and have since implemented new agricultural techniques to preserve the soil and biodiversity.The winery's vineyards primarily consist of Pinot Meunier, along with Pinot Noir and Chardonnay. What sets Piot-Sévillano apart is their commitment to sustainable viticulture, holding both the High Environmental Value (HVE) certification since 2015 and Organic Agriculture label since 2023. They avoid pesticides and herbicides, opting for manual labor and even employing horses to maintain the vineyards.Visitors can explore the estate through guided tours of the vineyard, pressing center, winery, and cellars, followed by a tasting of their signature Champagnes. The experience provides an immersive look into the family's values, modern techniques, and the unique terroir that defines their wines. The tasting room, located in the village's former schoolhouse, offers a warm welcome and panoramic views of the vineyards.
