A Legacy of Four Generations
Frantoio Tistarelli stands as a testament to Tuscan tradition and family dedication. Since the 1960s, the Tistarelli family has devoted themselves to crafting exceptional extra virgin olive oil in the rolling hills of Sarteano, near Montepulciano. Today, under the stewardship of Fausta Tistarelli and her family, the mill represents the fourth generation of olive oil makers who blend ancestral knowledge with innovative technology. The facility itself has been completely renovated, creating an inviting space where visitors can witness the entire journey from olive to bottle.
The Art of Cold Extraction
At the heart of Frantoio Tistarelli lies a commitment to quality through advanced technology. The mill employs Alfa Laval 4.0 equipment, featuring 100% stainless steel construction and zero-oxygen processing for cold extraction. This meticulous approach ensures that the delicate flavors, aromas, and nutritional properties of the olives are preserved. The production process begins in the carefully tended olive groves, where the family personally selects the finest olive varieties—Correggiolo, Moraiolo, Leccino, and Pendolino—grown on the Senesi hills. From harvest through pressing, every step is executed with precision and passion.
Signature Oils and Distinctive Flavors
The mill produces several distinguished extra virgin olive oils, each with its own character. Signorolio, named in tribute to Grandpa Alessandro (fondly known as "The Lord of Oils"), embodies the essence of the mill's work with its distinctive green color and golden highlights. It delivers intense, fresh herbaceous notes enriched by subtle hints of green almond, making it ideal for everyday use. Cinquemonti represents the "cru" or maximum expression of the mill's craft, featuring very low acidity and remarkable structure. Reticchio, produced from olives harvested at reasonable altitudes, offers a delicate, harmonious, and balanced flavor. The mill also produces organic versions and seasonal varieties, including Settimo, crafted from riper fruit harvested in early December and suited for cooking.
The Visitor Experience
Guided tours at Frantoio Tistarelli reveal the complete olive oil production journey. Expert staff walk visitors through the harvest, pressing, and extraction processes, explaining the secrets behind creating high-quality extra virgin olive oil. The experience is enhanced by informational totems and descriptions available in Italian and English, making it accessible to international visitors year-round. During the harvest season from mid-October to mid-December, the mill fills with the fragrance of new oil and the festive atmosphere of olive growers, creating an especially evocative experience.
Culinary Traditions and Local Flavors
Following the mill tour, visitors participate in guided tastings of multiple extra virgin olive oils, learning to recognize fragrances, flavors, and the distinctive traits that define quality. These tastings are accompanied by authentic Tuscan fare: fresh vegetables with olive oil for pinzimonio, traditional bruschetta (with or without garlic), and generous boards of local cured meats and pecorino di Pienza cheese. The experience concludes with classic Tuscan cantucci biscuits paired with Vin Santo, and a glass of local red wine such as Rosso di Montepulciano or Colli Senesi. This convivial moment embodies authentic Tuscan hospitality and the region's culinary heritage.
Innovation Meets Tradition
The mill's philosophy centers on harmony, balance, and intensity—principles reflected in every bottle produced. The family's dedication to excellence is evident in their pursuit of delicate, fruity, and harmonious oils that authentically express the territory. With support from engineer Nicola Marchetti, who joined the operation over two decades ago, the mill continues to innovate while honoring its roots. The doors remain perpetually open to those seeking to understand the craft, taste true quality, and experience the flavors of Tuscany.
