Birth of a Legendary Tavern

Den Gyldene Freden emerged in 1722 amid Stockholm's boisterous drinking culture, shortly after the Treaty of Nystad ended the Great Northern War. Named 'The Golden Peace' for Sweden's fortunate retention of Finland despite territorial losses, it opened under bartender Petter Hellberg in Gamla Stan, where salty preserved foods paired with beer and spirits in a city of 60,000 packed with nearly 800 taverns. The early 18th century marked Sweden's shift to parliamentary rule during its Age of Liberty, and Freden quickly became a social hub reflecting this transformative period.

Cultural Echoes Through the Centuries

Carl Michael Bellman, Sweden's beloved 18th-century poet and composer, frequented the tavern, immortalizing it in his songs alongside waiter Johan Hollinder, who took ownership in 1794. Later luminaries like songwriter J.D. Valerius, poet Erik Johan Stagnelius, and author Evert Taube gathered here, drawn to its authentic atmosphere. In the 20th century, singer-songwriter Cornelis Vreeswijk added to its musical legacy, cementing Freden's role as a cradle for Swedish artistic expression.

Saved by Vision and Legacy

By 1919, the restaurant faced closure, but artist Anders Zorn intervened, purchasing it for a fortune and commissioning a meticulous restoration. Though Zorn died in 1920 before completion, architect Torsten Stubelius executed his vision: uncovering walled cellar rooms, adding upper floors in 18th- and 19th-century styles, and reviving ancient recipes with custom dinnerware. The reborn Freden opened in 1922, preserving its tavern essence through changes in ownership, including a brief closure in the 1980s.

Nobel Connections and Ownership

Since the early 1900s, the Swedish Academy—selectors of the Nobel Prize in Literature—has convened weekly Thursday dinners here, often on the Bellman floor. The Academy now owns the building, ensuring its future while honoring traditions like October announcements of literary laureates. This bond underscores Freden's status in Guinness World Records as the second oldest restaurant with unchanged surroundings.

Timeless Swedish Fare

The menu honors Nordic home cooking with dishes like veal tartare topped with Gotland black truffles, meatballs served with lingonberries, pickled cucumbers, and creamy potato puree, or cheesecake with vanilla ice cream and cloudberries. Candelit tables draped in unbleached linen transport diners to the 1700s, blending historical recipes with refined modern touches.
