Franciscan Well occupies hallowed ground on Cork's North Mall, built directly upon the ruins of a Franciscan monastery dating to 1219. According to local legend, the water from the ancient well possessed miraculous and curative properties, drawing pilgrims from across Ireland seeking healing. Today, that same well continues to flow beneath the brewpub, a tangible connection to centuries of spiritual and now brewing tradition. When Shane Long founded the microbrewery in 1998, he chose this site deliberately, recognizing both its historical significance and its symbolic resonance with the monastic brewing heritage of medieval Europe.

Pioneering Craft Beer in Ireland

When Franciscan Well opened its doors in 1998, it became Ireland's seventh microbrewery at a time when craft beer was still a novelty in the country. Today, only three of those original seven breweries remain operational, and Franciscan Well stands proudly among them. This longevity reflects the unwavering commitment of founder Shane Long, who continues to own and operate the brewery independently—a rarity in an era when many craft breweries have been acquired by larger corporations. The microbrewery produces approximately 1,700 hectolitres annually, a deliberately modest output that prioritizes craftsmanship over mass production. Award-winning selections such as Chieftain IPA and Shandon Stout showcase the brewery's expertise, while newer collaborations like Jameson Caskmates IPA and Caskmates Stout demonstrate an ongoing commitment to innovation. The bar also stocks an extensive selection of craft beers from other Irish and international microbreweries, offering visitors a comprehensive exploration of the contemporary brewing landscape. Three 300-gallon serving vessels positioned directly behind the bar dispense Franciscan Well's own beers, a visual testament to the scale and ambition of the operation.

Franciscan Well partners with Pompei Pizza, a traditional local pizzeria, to produce wood-fired pizzas prepared fresh on-site. The pizzas are crafted from self-milled flour and locally sourced ingredients, reflecting a broader philosophy of supporting regional producers and maintaining quality standards. The pairing of artisanal pizza with house-brewed beer creates a complete culinary experience, and the pizzas have become hugely popular among visitors.
