A Bold Revival of Edinburgh’s Gin Heritage

Summerhall Distillery stands as a landmark in Edinburgh’s spirits scene, reviving a tradition dormant for more than 150 years. Established in 2014 by Matthew Gammell and Marcus Pickering, two longtime friends and self-taught distillers, the distillery was built from scratch within the historic Summerhall complex, formerly the Royal (Dick) School of Veterinary Studies. Their journey began with a treasured gin recipe from 1947, passed down through Marcus’s family, which inspired the creation of Pickering’s Gin. This recipe, rich in fragrant spices and citrus, forms the heart of their award-winning spirits.

Craftsmanship in a Historic Setting

Nestled in the former dog kennels of the old veterinary college, the distillery’s characterful space houses two 500-litre traditional Portuguese alembic stills named Emily and Gertrude. These stills have been ingeniously retrofitted to use hot water baths for heating, reflecting the founders’ engineering backgrounds and inventive spirit. Summerhall itself is a cultural hub, housing galleries, theaters, studios, and eateries, creating a vibrant community atmosphere that complements the distillery’s ethos of creativity and collaboration.

What started as a kitchen table idea quickly blossomed into a globally recognized brand. Pickering’s Gin gained early acclaim, becoming the Official Gin of the Royal Edinburgh Military Tattoo just four months after its launch. The distillery’s innovative products, including the Navy Strength Gin with its iconic bearskin cap and the British Airways Centenary Gin engineered for high-altitude enjoyment, showcase their commitment to quality and storytelling. Their gin baubles became a viral sensation, selling out 30,000 units in just 82 seconds.

Expanding Horizons and Community Roots

Beyond gin, Summerhall Distillery has expanded into producing rum and blended Scotch whiskies, continuously experimenting with new flavors and styles. The distillery’s location within the Summerhall arts complex fosters a unique synergy between craft spirits and the creative arts. Adjacent to the distillery is The Royal Dick bar, where Pickering’s Gin is served on tap, piping fresh from the stills, enhancing the sense of community and local pride.

During the COVID-19 pandemic, the distillery adapted by producing hand sanitiser, supplying over 200,000 litres to frontline services.
