Dishes are hearty and substantial, featuring generous portions of locally-sourced ingredients prepared with meticulous technique. Signature offerings showcase this commitment: Dales lamb arrives as a barbecued rump with crispy belly croquette, spring vegetable tartlet, and nettle-mint purée; dressed crab is elevated through exceptional ingredients and precise seasoning; wild halibut comes as an impressively large fillet with Jersey Royals and seaweed butter.
