Signature offerings showcase this commitment: Dales lamb arrives as a barbecued rump with crispy belly croquette, spring vegetable tartlet, and nettle-mint purée; dressed crab is elevated through exceptional ingredients and precise seasoning; wild halibut comes as an impressively large fillet with Jersey Royals and seaweed butter. The kitchen avoids the theatrical elements often associated with Michelin dining—no foams, dry ice, or atom-sized portions—instead delivering food that is instantly recognisable, beautifully balanced, and deeply satisfying.
