Day 7: Temples and Tastes
Today in Chiang Mai was a beautiful blend of the ancient and the modern, a day where the echoes of history resonated alongside the vibrant flavors of the city. It’s amazing how much you can pack into a single day when you're driven by curiosity and a love for exploration.
Our day began with a hearty breakfast at Goodsouls Kitchen - Vegan Restaurant, a vegan restaurant that Aoife had been particularly eager to try. As someone who enjoys a good steak, I was initially skeptical, but I have to admit, the food was surprisingly delicious. Róisín, of course, was in her element, rattling off the benefits of plant-based eating while simultaneously demolishing a stack of pancakes. I opted for their take on Khao Soi, a northern Thai staple, and it was an absolute delight – creamy, subtly spiced, and full of flavour. Aoife went for a smoothie bowl, packed with fresh fruit and granola. It was a vibrant start to the day, and it set the tone for the adventures that lay ahead.

With our bellies full, we set off to explore Wat Chedi Luang, a temple that dominates the Chiang Mai skyline. This temple has such a presence. As we approached, the sheer scale of the chedi was awe-inspiring. I learned that King Saen Muang Ma began construction in 1391 to house his father's ashes, though it wasn't completed until the mid-15th century. For nearly 500 years, it stood as the tallest structure in the region. Even now, in its partially ruined state after the earthquake of 1545, it exudes a sense of grandeur and history. It’s hard to believe that this magnificent structure was once home to the Emerald Buddha, Thailand's most revered religious artifact.

Walking around the base, I noticed the elephant statues that support the structure. Each one seemed to carry the weight of centuries on its back. Aoife was particularly fascinated by the City Pillar (Lak Mueang), named Sao Inthakin, which is housed in a beautiful pavilion on the temple grounds. I learned that King Kawila moved the City Pillar to the temple in 1800 and planted three trees to help the City Pillar to protect Chiang Mai. Unfortunately, women aren't allowed to enter the hall, a tradition Aoife found a bit archaic, but understood in the context of local customs. Róisín, ever the history enthusiast, was engrossed in reading about the temple’s past, pointing out architectural details and sharing interesting facts she gleaned from her guidebook. I made sure to take lots of photos, trying to capture the essence of this ancient place.
Next, we strolled over to Wat Phantao, located right next to Wat Chedi Luang. In contrast to the imposing stone structure of its neighbour, Wat Phantao is crafted entirely from teakwood. It was once part of Wat Chedi Luang. The name refers to the hearths used to cast Buddha images. The wooden assembly hall is a rare example of a royal hall, which served as a royal residence and public hall. The intricate carvings and the way the light filtered through the wooden panels created a serene atmosphere. I found myself drawn to the peacock carving above the main door, a symbol of northern nobility, and the sleeping dog underneath, representing the birth year of the original owner. It was a beautiful example of Lanna architecture, and I felt a sense of peace wash over me as I wandered through the grounds.

For lunch, we ventured to Huen Phen, a restaurant known for its traditional northern Thai cuisine. The place was bustling with locals and tourists alike, a testament to its popularity. We ordered a variety of dishes, including Khao Soi (I couldn't resist comparing it to the vegan version from breakfast), Sai Oua (northern Thai sausage), and Gaeng Hung Lay (a flavorful pork curry). Each dish was a burst of authentic flavors, a testament to the region’s culinary heritage. I particularly enjoyed the Khao Ngiaw, rice mixed with pig's blood and spices, served with garlic, shallots and chilies. The experience was a true immersion into the local culture, and I relished every bite.

After lunch, Aoife, Róisín and I decided to indulge in some retail therapy at the MAYA Lifestyle Shopping Center Chiangmai. This modern mall was a stark contrast to the ancient temples we had visited earlier in the day, but it offered a glimpse into Chiang Mai's contemporary side. We wandered through the various shops, browsing everything from high-end brands to local handicrafts. Róisín, of course, was on the lookout for unique clothing and accessories, while Aoife was drawn to the bookstores. I found myself enjoying the air-conditioned comfort and the opportunity to people-watch. There was a lot of different foods and snacks, so we sampled fried meatballs and mango sticky rice. The MAYA Lifestyle Shopping Center has six levels, including high and low-end shops, fancy restaurants, two food courts, a gym, and a movie theater. It really does have something for everyone!

As the day drew to a close, we found ourselves reflecting on the experiences we had shared. From the ancient temples to the vibrant flavors of the local cuisine, Chiang Mai had once again captivated us with its unique charm. I am so glad I got to experience it with my family. As much as I love traveling on my own, it is much more special when I get to share those experiences with them. I am grateful for the memories we made today, and I am already looking forward to what tomorrow will bring. Tomorrow, we're planning a visit to the Chiang Mai Zoo and the Night Bazaar, and I'm sure that will be another set of adventures. The Chiang Mai Night Bazaar is a must-see, and I am looking forward to seeing what wares the vendors have to offer. I heard there is a lot of good street food there, so I am excited to try some more authentic Thai cuisine.
Tonight, as I sit here writing, I can’t help but feel a sense of contentment. Chiang Mai has a way of seeping into your soul, leaving you with a sense of peace and wonder. It’s a city that I know I will return to time and time again, each visit revealing new layers of its rich tapestry. I look forward to sharing the rest of our journey with you all.
