As our Ethiopian adventure draws to a close, I find myself reflecting on the incredible experiences we've shared as a family. Lalibela, with its ancient churches and vibrant culture, has left an indelible mark on our hearts. Today, we set out to soak in every last bit of this magical place before our journey back to Lisbon.

Our final day in Lalibela began with a delightful breakfast at Lalibela Cooking Class. It was such a unique experience to start the day not just eating, but learning about Ethiopian cuisine. Asnka, our host, welcomed us into her home kitchen and shared her knowledge of Ethiopian cooking. Nilton was particularly fascinated by the process of roasting coffee beans, while Francisca enjoyed learning about the different spices used in Shiro and Tibs. It was a hands-on experience that brought us closer to the heart of Ethiopian culture, and we all left with full stomachs and a newfound appreciation for the art of Ethiopian cooking.

After breakfast, we decided to explore the area with Access Eco Trekking Tours. We wanted to experience the landscapes surrounding Lalibela and learn more about the local community. Our guide was incredibly knowledgeable about the area's flora and fauna, and he shared stories about the traditions and customs of the people who call this region home. It was a refreshing change of pace from the historical sites, and it gave us a deeper understanding of the natural beauty that surrounds Lalibela.

Next on our list was a visit to BELAY LALIBELA CHURCHES TOUR GUIDE. Even though we had explored the rock-hewn churches extensively over the past few days, we felt that having a guided tour would provide us with a more in-depth understanding of their history and significance. Belay, our guide, was a wealth of information, sharing fascinating stories and insights about each church. He explained the intricate details of the architecture and the symbolism behind the religious art. It was a truly enriching experience that deepened our appreciation for these ancient wonders. For lunch, we ventured to Dirb Tezara Restaurant. The smells alone were enough to make our mouths water as we approached. We indulged in some authentic Ethiopian dishes, savoring the rich flavors and spices that define the local cuisine. The injera, as always, was a star, serving as the perfect accompaniment to the flavorful stews and sauces. It was a satisfying and delicious meal that fueled us for the rest of our day.

In the afternoon, we decided to do some souvenir shopping at Lalibela Gemstones and Jewelry. I was particularly interested in finding a unique piece that would remind me of our time in Ethiopia. I ended up purchasing a stunning Lalibela opal pendant for Francisca, its dark color with vivid play-of-color reminding me of the depth and vibrancy of Ethiopian culture. Nilton chose a small, carved stone animal, a souvenir he was excited to take back to school to show his friends.

As the day drew to a close, we treated ourselves to a final Ethiopian dinner at Bet Fikre restaurant. This cozy spot was known for its traditional dishes and warm atmosphere. We ordered a vegetarian platter, which allowed us to sample a variety of local specialties. The communal dining style encouraged sharing and conversation, and we enjoyed reminiscing about our favorite moments from the trip. The honey wine was the perfect accompaniment, adding a touch of sweetness to our farewell meal.
