Day 11: A Day of Spiritual and Thermal Delights: Exploring Cortona and Soothing Waters

Whispers of History and Thermal Springs
Today was a beautiful blend of exploring ancient sites and unwinding in nature's warm embrace. Tuscany continues to surprise me with its hidden gems, and I'm excited to share the day's adventures with you. From the spiritual aura of Cortona to the soothing waters of Fosso Bianco, it was a day that nourished both the soul and the body.
Our day began with a hearty breakfast at La Vineria di Montepulciano. I savored a delicious vegan focaccia, while Isabella enjoyed a classic Italian breakfast. It's amazing how such a simple meal can be so satisfying, especially when enjoyed in the charming atmosphere of this local spot. The staff were incredibly friendly, helping me navigate the menu to find the best vegan options.
With our stomachs full and our spirits high, we set off for Cortona, a town that had been on my list since we started planning this trip. The drive itself was breathtaking, winding through rolling hills dotted with vineyards and olive groves. It was the kind of scenery that makes you want to stop every few minutes to capture the perfect photo.
Cortona Cathedral: A Journey Through Time
Our first stop in Cortona was the Cortona Cathedral, also known as the Duomo. This majestic structure is dedicated to the Assumption of the Virgin Mary and has a rich history dating back to the 11th century. Built on the remains of an ancient Roman temple, the cathedral has undergone several transformations over the centuries.
As we stepped inside, I was immediately struck by the sense of history and spirituality that permeated the air. The interior is divided into three parts: a central nave and two side aisles, with frescoed ceilings from the 19th century. The columns with Brunelleschi-inspired capitals added to the architectural grandeur. Isabella, with her librarian's eye, was particularly fascinated by the artwork, including the Adoration of the Shepherds by Pietro da Cortona.
Wandering through the cathedral, I couldn't help but reflect on the countless people who had walked these same floors over the centuries. It was a humbling experience, connecting us to the past in a tangible way. The mix of architectural styles, from Romanesque to Gothic, told a story of continuous evolution and adaptation.
Leaving the cathedral, we took a stroll around Cortona, soaking in the atmosphere of this charming town. The narrow streets, lined with medieval buildings, exuded a sense of timelessness. I imagined what it must have been like to live here centuries ago, and I felt a deep appreciation for the history that surrounds us.

Lunch at 99 GRADI di Fiorino Davide
By lunchtime, we were ready for another culinary adventure. We found a delightful spot called 99 GRADI di Fiorino Davide. This restaurant is known for its Italian and Mediterranean cuisine, and it certainly didn't disappoint. Isabella ordered a classic burger, while I opted for a Piadina, a thin Italian flatbread sandwich. The staff were friendly and the service was excellent.
Sometimes, the most profound experiences are found in the simplest moments.
After lunch, we began the drive to Fosso Bianco. As a Maple Syrup Coordinator, I'm used to the natural beauty of Canada, but there was something uniquely captivating about the Tuscan landscape. The way the sunlight filtered through the trees, the gentle breeze rustling the leaves – it was a sensory experience that invigorated my soul. Isabella, ever the bookworm, read aloud from our travel guidebook, sharing interesting facts about the region's history and geology.
Fosso Bianco: A Thermal Paradise
Our final destination for the day was Fosso Bianco, a natural hot spring near the village of Bagni San Filippo. This hidden gem is known for its stunning white limestone formations and warm, therapeutic waters. As we arrived, the air was filled with the scent of sulfur, a telltale sign of the mineral-rich springs.
We followed a path into the woods, the sound of rushing water growing louder with each step. Soon, we emerged into a clearing and were greeted by the sight of the Balena Bianca, or White Whale, a massive calcium formation that resembles the mouth of a whale. The warm water cascaded down the rocks, creating a series of small pools perfect for soaking.
Isabella and I changed into our swimsuits and eased into the warm water. The temperature was perfect, around 25°C, and the mineral-rich water felt incredibly soothing on our skin. We spent the next few hours relaxing in the pools, letting the water work its magic. I couldn't help but think about the Etruscans and Romans who had enjoyed these same springs centuries ago.
As the sun began to set, casting a golden glow over the woods, we reluctantly left the thermal paradise of Fosso Bianco. We felt refreshed, rejuvenated, and deeply connected to nature. It was the perfect way to end a day of exploring Tuscany's hidden treasures.

Abbazia di Monte Oliveto Maggiore: A Missed Opportunity
We had planned to visit the Abbazia di Monte Oliveto Maggiore, a Benedictine monastery known for its stunning frescoes. However, by the time we finished at Fosso Bianco, it was too late to make the trip. We made a note to visit it another time, perhaps on a future trip to Tuscany.
For dinner, we chose Ristorante La Briciola back in Montepulciano. The restaurant had a cozy atmosphere, and the staff were very welcoming. We shared a delicious pasta dish and a bottle of local wine, savoring the flavors of Tuscany. It was the perfect ending to a day of exploration and relaxation.
As I reflect on today's adventures, I'm filled with gratitude for the opportunity to experience the beauty and history of Tuscany. From the spiritual aura of Cortona to the soothing waters of Fosso Bianco, it was a day that nourished both the soul and the body. And to share it all with Isabella makes it even more special.
Tomorrow marks the final day of our Tuscan adventure. We plan to visit the Museo Archeologico, The Fontana Maggiore, and Pozzo di San Patrizio in Orvieto. And of course, we will have to do some shopping before heading back to Edmonton!
