Founded by William and Leticia Jarvis, the winery emerged from their appreciation for fine Bordeaux reds and Montrachet whites, leading them to plant vineyards in 1986 and complete the state-of-the-art underground winery in 1995. The vision behind Jarvis Estate was to create a space where the entire winemaking process, from grape to bottle, occurs underground, taking advantage of the cave's consistent temperature and humidity. Touring the cave reveals the meticulous steps involved in crafting Jarvis Estate's wines, including lush Chardonnays, rich Cabernet Sauvignons, and velvety Merlots. The tour includes a visit to the Cuve Gallery, which features a collection of a dozen massive oak vessels assembled in the cave by French coopers. An underground waterfall helps maintain the cave's steady temperature and humidity, which are vital to Jarvis Estate's signature style of extended aging in new French oak barrels. Visitors can explore the Crystal Chamber, which houses a collection of large quartz crystals and amethyst geodes. The tour culminates in an intimate, seated tasting in the Tasting Chamber, where guests can sample a curated selection of Jarvis Estate and Reserve Collection wines. Jarvis Estate wines, crafted by winemaker Scott Morrison, are made entirely from estate fruit and spend extended time aging in French oak.
