The entire process lasts six months, during which the grape skins naturally infuse the wine, resulting in an amber hue for Rkatsiteli, Mtsvane, and Kisi, and a deep red color for Saperavi. Sesikeli Winery specializes in key Georgian grape varieties, including Rkatsiteli, Mtsvane, Kisi, and Saperavi. Winemaker Simon Sesikashvili crafts approximately 6,000 bottles annually, ensuring that each bottle reflects the heritage of his ancestors and the unique terroir of the Kakheti region.
