    Konishi Brewing, nestled in Itami, Hyogo Prefecture, stands as a testament to centuries of sake-making tradition. Founded in 1550, the brewery is recognized as the oldest family-owned sake brewery in Japan. Originally, the Konishi family started in the medicinal drug business but shifted to sake brewing in 1612. The brewery's history is intertwined with the story of its renowned brand, Shirayuki (Snow White), named in the 17th century by a family member inspired by the snow-capped Mount Fuji. Konishi Brewing has played a significant role in the evolution of sake. Itami, where the brewery is located, is known as the birthplace of sake, and Konishi was at the forefront of sake production, even launching a shipping company to transport their sake to Edo (now Tokyo) during the capital's rise. The brewery is known for the early adoption of new technology and methodology. While the brewery is not generally open to the public, visitors can explore the Hakusetsu Brewery Village Longevity Storehouse, a renovated Edo-period sake brewery, to view sake brewing tools. Konishi Shuzo also produces a range of Belgian-style beers. The brewery also has a restaurant, Chojukura, which also serves as a museum on the history of sake brewing.
