Founded in 1550, the brewery is recognized as the oldest family-owned sake brewery in Japan. Originally, the Konishi family started in the medicinal drug business but shifted to sake brewing in 1612. The brewery's history is intertwined with the story of its renowned brand, Shirayuki (Snow White), named in the 17th century by a family member inspired by the snow-capped Mount Fuji. Konishi Brewing has played a significant role in the evolution of sake. Itami, where the brewery is located, is known as the birthplace of sake, and Konishi was at the forefront of sake production, even launching a shipping company to transport their sake to Edo (now Tokyo) during the capital's rise.
