Adieu, Fes!

As my journey through Fes draws to a close, I find myself reflecting on the kaleidoscope of experiences that have colored my days here. From the labyrinthine alleys of the medina to the vibrant tapestry of its people, Fes has woven itself into the very fabric of my being. Today, I embarked on a final exploration, a bittersweet symphony of sights, sounds, and flavors, determined to etch every last moment into my memory. It was a day of historical wonders, panoramic vistas, and aromatic encounters, a fitting farewell to this captivating city.

My day began with a hearty breakfast at Cinema Cafe. Fuelled up with some local delicacies, I prepared myself for a day of exploration. The cozy atmosphere of the cafe was the perfect start, a gentle ease into the day's adventures.

The first stop on my itinerary was the Fes-Volubilis Tour. The drive itself was a scenic prelude, the landscape unfolding like a scroll of ancient tales. I was particularly excited about Volubilis, having read so much about its historical significance. As a tour guide myself, the idea of exploring ancient ruins always excites me.

Volubilis stood in majestic ruin, a testament to the Roman Empire's reach. The remnants of grand structures whispered stories of a bygone era, of emperors and citizens, of triumphs and tribulations. I wandered through the sprawling complex, my imagination painting vivid pictures of life in this ancient city. The mosaics, remarkably preserved, offered a glimpse into the artistic sensibilities of the time. It was humbling to walk in the footsteps of history, to connect with a civilization that had thrived here centuries ago. It made me think about the historical tours I give in Lisbon, and how I can incorporate some of the things I learned into my tours.

To travel is to live, and Fes has made me feel truly alive.

After Volubilis, my journey continued to Borj Sud, a historic fort perched atop the hills overlooking Fes. The panoramic views from the fort were simply breathtaking. The sprawling cityscape, a mosaic of rooftops and minarets, stretched out before me, bathed in the golden light of the afternoon sun. From this vantage point, I could appreciate the sheer scale and complexity of the medina, a living, breathing organism that has evolved over centuries.

Borj Sud itself is a fascinating structure, a relic of the Saadian dynasty's efforts to fortify the city. Its sturdy walls and strategic location spoke of a time when Fes was a city under siege, a prize to be defended at all costs. As I stood there, gazing out at the cityscape, I couldn't help but feel a sense of awe and respect for the generations of people who had shaped this remarkable place.

My explorations then led me to the Henna Souk, a sensory explosion of colors, scents, and sounds. The souk was a vibrant hub of activity, a microcosm of Fes's rich cultural heritage. Stalls overflowed with spices, traditional cosmetics, and, of course, henna, the natural dye used by Moroccan women for centuries.

I wandered through the souk, my senses overwhelmed by the sheer variety of sights and smells. The air was thick with the aroma of exotic spices, the vibrant colors of the textiles dazzled my eyes, and the sounds of bartering and banter filled my ears. I struck up conversations with local vendors, learning about the history and traditions behind their crafts. It was a truly immersive experience, a chance to connect with the heart and soul of Fes.

Before lunch I made a stop at La Petite Maison Berbere. I wanted to get Francisca a rug, and I had heard that La Petite Maison Berbere was the place to go. I am excited to bring it back home to her. She will love it.

Lunch was at Dar Chadia Fes, a restaurant recommended to me by a local I met at the Henna Souk. Nestled in a quiet corner of the medina, Dar Chadia offered a welcome respite from the hustle and bustle of the souks. The restaurant's traditional Moroccan decor created a warm and inviting ambiance, and the aroma of the dishes wafting from the kitchen was simply irresistible.

I savored a tagine, a slow-cooked stew of meat and vegetables infused with aromatic spices. Every bite was an explosion of flavor, a testament to the culinary artistry of Moroccan cuisine. The tagine was accompanied by a selection of salads, each one a symphony of fresh ingredients and vibrant dressings. It was a truly memorable meal, a fitting tribute to the flavors of Fes.

As the day drew to a close, I found myself at Restaurant La Cabane for a final dinner. Located in the Ville Nouvelle, La Cabane offered a different culinary experience, a fusion of Italian and Moroccan flavors. I opted for a pizza, eager to sample the restaurant's unique take on this classic dish.

The pizza was delicious, a testament to the chef's creativity and skill. The crust was perfectly crisp, the toppings were fresh and flavorful, and the combination of Italian and Moroccan spices was simply divine. It was a fitting end to my culinary journey through Fes, a reminder of the city's ability to blend tradition and innovation in unexpected and delightful ways.

Tomorrow, I leave Fes, but I will carry the memories of this journey with me always. The ancient ruins of Volubilis, the panoramic vistas from Borj Sud, the aromatic alleys of the Henna Souk, and the culinary delights of Dar Chadia and La Cabane will forever be etched in my mind. Fes has been an experience for the senses, a journey into the heart of Moroccan culture and history. As I prepare to bid adieu to this captivating city, I know that a part of me will always remain here, wandering through its labyrinthine alleys, savoring its exotic flavors, and listening to the echoes of its ancient tales. Perhaps one day, Francisca and Nilton will join me, and we can experience the magic of Fes together. Until then, au revoir, Fes!
