A Fond Farewell to Fes


Today marked the end of our ten-day adventure in Fes, and what a journey it has been! From the moment we landed, I knew this trip would be special, but I never anticipated the depth of cultural immersion and the sheer beauty we encountered at every turn. Today was all about savoring those last moments, soaking in the history, and, of course, indulging in the exquisite flavors of Moroccan cuisine. Lena and I, along with our friends, were determined to make the most of our final day, and Fes certainly didn't disappoint.

Our day started with a hearty breakfast at La Truffe. After days of tagines and couscous, I was ready for something a bit different. The cozy atmosphere was really nice, and the coffee was just what I needed to kickstart the day. It’s funny, even in Morocco, I find myself gravitating towards a good cup of coffee to get going. It’s a habit I picked up in Munich, and some things just stick with you, no matter where you travel! The others opted for some pastries, and we all agreed it was a delightful start to our last day.

With our stomachs happy, we set off to explore the Aben Danan Synagogue, a hidden gem in the Mellah district. Finding it was a bit of an adventure in itself, winding through narrow streets and bustling markets. It felt like stepping back in time. I’ve always been fascinated by the Jewish heritage in Morocco, and this synagogue was a poignant reminder of a once-thriving community. The architecture was simple yet elegant, with beautiful wooden ceilings and intricate tile work. It’s incredible to think this place has been standing since the 17th century. I remember thinking about the families who had prayed within those walls, their hopes and dreams echoing through the centuries. It was a truly moving experience.

Visiting historical sites isn't just about seeing old stones; it's about connecting with the stories of those who came before us.


Next on our itinerary was Borj Sud, a fortress perched on a hill overlooking the city. The views were absolutely breathtaking! From up there, you could see the entire medina sprawling out before you, a maze of rooftops and minarets stretching as far as the eye could see. The structure itself is quite impressive, a testament to the military architecture of the 16th century. I took countless photos, trying to capture the panoramic beauty, but no picture could truly do it justice. It was the perfect spot to reflect on our journey, taking in the vastness of Fes and the incredible experiences we'd shared. Lena was particularly taken by the view, pointing out various landmarks we had visited over the past week. It was a great way to reminisce and appreciate how much we had seen and done.

The highlight of our day, however, was undoubtedly the cooking class at Fez Cooking School at Palais Amani. This was something I had been looking forward to since we booked the trip. I’ve always enjoyed cooking, and I was eager to learn the secrets of Moroccan cuisine. The school itself is located in a stunning riad, a true oasis of tranquility in the heart of the medina. The setting alone was enough to inspire culinary creativity.

Our instructor was a passionate chef who shared her knowledge and skills with infectious enthusiasm. We learned to make a traditional tagine, mastering the art of layering flavors and spices to create a dish that was both complex and comforting. It was a hands-on experience, from chopping vegetables to grinding spices, and I loved every minute of it. The best part, of course, was tasting our creations. The tagine was absolutely delicious, a testament to the quality of the ingredients and the skill of our instructor. I can’t wait to try recreating it back home in Munich, though I suspect it won’t taste quite the same without the Moroccan sunshine and the vibrant atmosphere of Fes.

As the sun began to set, we made our way to Restaurant Dar Hatim for our final Moroccan feast. This restaurant came highly recommended, and it did not disappoint. The setting was exquisite, a beautifully decorated traditional home that felt more like a palace. The food was exceptional, each dish a celebration of Moroccan flavors and culinary traditions. I opted for the lamb tagine, and it was melt-in-your-mouth tender, infused with aromatic spices and served with fluffy couscous. Lena tried the pastilla, a sweet and savory pie filled with pigeon, almonds, and spices, and declared it to be the best she had ever tasted. The service was impeccable, the staff treating us like honored guests.

After dinner, we decided to have one last drink at the Empire bar. It was a lively spot, filled with locals and tourists alike, all enjoying the warm evening air and the vibrant atmosphere. We sipped on some local beer, reminiscing about our adventures in Fes and making plans for future trips. It was the perfect way to end our Moroccan adventure, surrounded by friends and good cheer.

Tonight, as I pack my bags, I’m filled with a sense of gratitude for the experiences we’ve had in Fes. This city has captured my heart with its rich history, vibrant culture, and, of course, its incredible cuisine. I’ll cherish the memories we’ve made here, from exploring ancient synagogues to mastering the art of tagine cooking. Fes, you’ve been an absolute delight, and I hope to return someday soon.

Tomorrow, we head back to Munich, filled with stories and souvenirs to share. While I’m looking forward to returning to the comforts of home, I know a part of me will always remain in the enchanting city of Fes. Until next time, Morocco!

I’m already thinking about our next trip. Perhaps somewhere in Eastern Europe, exploring my roots in Czechia, or maybe even venturing further afield to Southeast Asia. The world is vast, and there are so many more adventures to be had. But for now, it’s time to rest, recharge, and start planning our next culinary and cultural escapade.

And of course, I need to remember to buy a travel adapter when I get back to Munich. It was a real pain not having one on this trip, and I definitely don’t want to forget it next time! Also, I need to find a good portable phone charger. My phone battery died more than once, and it's crucial to keep the phone charged, especially when navigating new places.
