Located in the heart of Collingwood, Fixation Brewing Co - The Incubator is a haven for IPA enthusiasts. Born from a passion for India Pale Ales, Fixation Brewing Co was founded in 2015 with the goal of brewing the best IPAs possible. The Incubator, which opened in 2018, serves as both a brewery and a tasting room, allowing brewers to experiment with new flavors and pour them directly from the tanks. The Incubator offers a wide range of IPAs, from the flagship Fixation IPA to seasonal and one-off beers. With a 600-liter system and ten taps, there's always something new to discover. For those new to the brand, the signature Fixation IPA is a must-try, a 6.4% ABV West Coast IPA packed with Mosaic, Citra, Simcoe, and Amarillo hops. The brewery itself is a sight to behold, decked out with hop motifs and stainless steel tanks. While tours aren't formally offered, the bar is nestled against the brewery, allowing visitors to get up close and personal with the brewing process. The friendly staff are always happy to answer questions and share their love of IPAs. While Fixation was originally an independent brewery, it was purchased by Lion in 2021. Despite this change in ownership, the brewery remains committed to producing high-quality, innovative IPAs.
