Domaine Debray, a family-owned wine estate, is located in the heart of Beaune, just a few meters from the famous Hospices. Founded in 2006 by Yvonnick Debray, a passionate wine distributor, it is one of the youngest estates in Burgundy. The 4-hectare vineyard is worked using traditional methods to produce high-quality wines. Visitors are warmly welcomed for tours of the winery and cellar, with clear explanations adapted to each person's level of knowledge. The tour covers the winemaking process, from grape arrival to bottling. Tastings of six wines provide a global overview of the estate's spirit and the care taken with the wines. Domaine Debray produces a range of appellations in the Côte de Beaune, Côte de Nuits, and Côte Chalonnaise. These include Saint-Aubin, Auxey-Duresses, Saint-Romain, Crémant de Bourgogne, Corton-Charlemagne, and Clos de Vougeot. Several Premiers Crus and Grands Crus, both red and white, are available. Domaine Debray employs manual grape harvesting, ensuring only the best fruit is selected. The vinification process is meticulously monitored, with alcoholic fermentation lasting 4 to 6 weeks. Fermentation and maturation occur in tanks and oak barrels, with wines aged up to 5 years, depending on the appellation and vintage. Notable red wines include Pinot Noir from Hautes Côtes de Beaune, Aloxe-Corton, and Côte de Nuits Villages. Since 2019, the estate has been converting to organic farming.
