Initially, their agricultural practices were rooted in tradition, cultivating celery, leeks, corn, and hay. However, their academic backgrounds allowed them to experiment with innovative techniques like hydroponic farming, bumblebee pollination, and organic and biodynamic methods. Today, Hilberg Pasquero focuses on producing Barbera and Nebbiolo wines, paying homage to the terroir to which it belongs. The winery's philosophy extends beyond appellations, emphasizing the quality and identity of the wines produced. Some of their unclassified labels, such as the red Vareij and Rosato, are highly refined and fully represent the territory. Hilberg Pasquero's approach to viticulture centers on the inter-row, employing organic, biodynamic, and bioergodynamic principles to manage plant conflict and promote soil health. They preserve the unique characteristics of their vines by using very old mother vines to propagate new plantings.
