Today in Fes was a symphony of ancient echoes and vibrant modern life. From exploring historical plazas to indulging in culinary masterpieces, the city unfolded its layers in ways that captivated all of us. Join me as I share the day's adventures, filled with history, culture, and unforgettable flavors.



The day began with a hearty breakfast at Restaurant MB. The mix of French classics and Moroccan specialties was the perfect start. I opted for the traditional pigeon pastilla, a delightful combination of crispy warqa pastry, tender pigeon filling, almonds, and sweet spices. Greta chose the Ocean Roll of Shrimp and Fish, equally impressed by the crispy wrapper and flavorful filling. Kian, ever adventurous, enjoyed a simpler Moroccan pancake, which he devoured with gusto. Restaurant MB, situated in Ville Nouvelle, certainly lived up to its reputation, offering a refined dining experience that was a pleasant contrast to the bustling medina. The service was attentive, and the ambiance was both polished and modern. It was a delightful start to a day filled with exploration.

Our first stop was Bab Makina Plaza, a majestic stone square that immediately transported us back to medieval times. The high stone walls and broad ramparts spoke of a rich history, and I could almost hear the echoes of ancient defenders. Kian was fascinated by the sheer size of the plaza and ran around, imagining himself as a knight guarding the city. I learned that Bab Makina often hosts music festivals, and I couldn't help but imagine the square filled with lights and music, a vibrant blend of ancient and modern culture. Greta, with her librarian's eye for detail, admired the architecture and the imposing wooden doors flanked by square towers. We spent some time soaking in the atmosphere, taking photos, and simply enjoying the sense of stepping back in time.

Next, we ventured into the heart of the medina to Place Seffarine. As we approached, the rhythmic clang of hammers grew louder, announcing our arrival at the coppersmiths' square. The air was filled with the scent of metal and the sounds of artisans at work, shaping copper into beautiful teapots, cooking pots, and trays. It was like stepping into a living workshop, where ancient traditions were still alive and thriving. I was particularly impressed by the intricate metal engraving, a delicate technique used to decorate various objects. Greta, always drawn to historical landmarks, was fascinated by the Al-Quaraouiyine University, whose library, considered the oldest in the world, stands proudly on the square. Kian, initially intrigued by the hammering, soon became captivated by a craftsman who let him try his hand at shaping a small piece of copper. It was a moment that truly brought the history of the place to life for him.

For lunch, we chose Darori, a restaurant nestled in a 17th-century riad. The interior design was breathtaking, with intricate tile work and beautiful architecture that transported us to another era. The menu was a delightful fusion of traditional Moroccan recipes and modern French influences. I opted for the lamb tagine with raisins, while Greta chose the seafood pastilla. Both dishes were exquisitely prepared and bursting with flavor. Kian, surprisingly, enjoyed the pumpkin with honey, cinnamon, and orange blossom water. The staff treated us like family, sharing stories about the building's history and making us feel incredibly welcome. Darori was more than just a meal; it was an immersive cultural experience that we all cherished.

After lunch, we embarked on a Fes-Volubilis Tour, eager to explore the Roman ruins of Volubilis. The drive was scenic, passing through rolling hills and olive groves. As we approached Volubilis, the ancient ruins emerged on the horizon, a testament to a bygone era. Exploring the site, I was struck by the scale and complexity of the Roman settlement. The mosaics, though weathered by time, still retained their beauty, depicting scenes of daily life and mythology. Greta, ever the historian, shared stories of Roman rule and the significance of Volubilis as a trading hub. Kian, armed with his imaginary sword, explored the ruins with boundless energy, imagining himself as a Roman soldier defending the city. The tour also included a stop at Moulay Idriss, a charming town named after Morocco's first Islamic ruler. The narrow streets and white-washed buildings exuded a sense of tranquility and spirituality. It was a perfect complement to the grandeur of Volubilis, offering a glimpse into Morocco's Islamic heritage.

As the day drew to a close, we decided to experience Fes's nightlife at Empire Bar. The bar had a lively atmosphere, with music and chatter filling the air. I enjoyed a Moroccan beer, while Greta savored a glass of local wine. Kian, of course, opted for a refreshing juice. It was a relaxing way to unwind after a day of exploration, soaking in the city's vibrant energy. While some reviews mention the bar's mixed reception, we found the staff friendly and the ambiance enjoyable.

Tonight, we’re having dinner at Nur. I have read that Chef Najat Kaanache presents seven courses of fine food with creativity and flare. While there is no menu to select from, the choice is the number of courses. I´m really looking forward to it.
