Gut Ottenstein, a captivating blend of organic farm and historical castle, lies nestled in the picturesque Waldviertel region of Lower Austria. Today, the castle is owned by the Windhag-Stipendienstiftung, which uses the estate to support educational opportunities for young people. The bio-teichwirtschaft (organic fish farming) is a cornerstone of Gut Ottenstein's identity. For over two decades, the estate has been committed to sustainable and ethical farming practices. The ponds are home to a variety of fish species, most notably the Waldviertler Karpfen (carp), a regional delicacy. Visitors can observe the traditional methods of fish farming, learn about the importance of biodiversity, and even try their hand at fishing in designated areas. The estate also offers seasonal specialties such as smoked fish, wild game products, and freshwater crayfish.
