Iago cultivates his two hectares of vineyards organically, without the use of synthetic pesticides or herbicides. The grapes are harvested by hand, and the winemaking process relies on natural yeast fermentation in qvevri, large clay vessels buried underground. Some of Iago's qvevri are 300 years old. Visitors to Iago's Winery can experience the entire winemaking process, from vineyard to bottle. Iago himself often leads tours and tastings, sharing his knowledge and passion for Georgian wine. Guests can sample Iago's signature Chinuri wine, as well as other varieties made using the qvevri method. The winery also produces Chacha, a traditional Georgian spirit distilled from grape pomace. The winery's commitment to organic and traditional methods has earned it recognition both in Georgia and abroad. Iago was the first winemaker in Georgia to receive a bio-certificate in 2005. His wines are exported to several countries, introducing the world to the unique flavors of Georgian qvevri wine.
