The Khola Chilli, also known as Canacona Chilli, is a celebrated variety of chilli pepper exclusively grown on the hilly slopes of Khola village in South Goa's Canacona taluka. Chillies were introduced to Goa by the Portuguese in the 1500s, and over time, they were named after their cultivation location. The Khola Chilli has been cultivated in Khola village for at least 120 to 150 years, with farmers employing traditional organic practices passed down through generations. The village's proximity to the Arabian Sea, well-drained loamy soil rich in minerals, and specific temperature and humidity conditions contribute to the chilli's unique characteristics. The Khola Chilli is approximately 5.6 to 7.4 cm in length and 1.2 to 1.4 cm in diameter. Its thick outer skin enhances its shelf life and reduces breakage. The chilli has a pungency of 17,100 SHU, an ASTA color of about 34.3, and a capsaicin content of 0.11 percent. It is rich in potassium, manganese, and magnesium and is used as a natural food coloring agent due to its high capsanthin content. In 2019, the Khola Chilli was granted a Geographical Indication (GI) tag, recognizing its uniqueness and origin. In 2024, it was officially declared a Farmer Plant Variety, giving the Khola/Canacona Chilli Cultivators Group exclusive rights to produce, sell, and market the variety.
