The brewery's founder, Ihei Kitahara, was drawn to the Hakushu region by the purity of its water. The main building, almost 200 years old, once served as lodging for Emperor Meiji in 1880 during his tour of Yamanashi, Mie, and Kyoto. The rooms prepared for the emperor, known as Anzaisho, have been preserved and are now part of a museum on site. Shichiken combines traditional brewing methods with modern innovation. They collaborate with local farmers to cultivate high-quality sake rice and use advanced technology to maintain strict quality control throughout the brewing process.
